1 cup rolled oats
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 egg
¼ cup vegetable oil
¾ cup brown sugar
1 teaspoon vanilla
1 cup chopped fresh strawberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a muffin pan, or use paper liners. In a small bowl, combine oats and buttermilk, and let stand 5 minutes. In a medium bowl, combine flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, beat together the egg, oil, brown sugar and vanilla. Blend in the oat mixture. Stir in the flour mixture, just until moistened. Fold in strawberries. Fill muffin cups 2/3 to 3/4 full.

1 cup regular or instant plain oatmeal
1 cup cake flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/3 cup packed dark brown sugar
2 tablespoons finely diced crystallized ginger
1/4 cup raisins
1 1/2 egg whites
1 cup nonfat milk
1/2 cup diced strawberries

Steps:

  • Preheat oven to 400 degrees
  • Spray 12-cup regular-size muffin tin with nonstick spray.
  • Combine oatmeal, flour, baking powder, cinnamon and brown sugar in one bowl.

This is just a little something I concocted this morning in lieu of how chilly it is outside (yes yes I know 50 degrees isn't very cold, but it is for florida). It combines my two favorite things--cinnamon and strawberries!

1/2 cup oats
3/4 cup water
1 teaspoon Equal sugar substitute
1/2 cup strawberry, chopped
1 tablespoon cinnamon

Steps:

  • Combine the oats and water in a bowl, stir and add about half the Equal and cinnamon.
  • Microwave for 1 minute.
  • Stir, then add in the strawberries and stir again.
  • Microwave for 1 more minute.
  • Stir again and add in the remainder of the Equal and the cinnamon.
  • Microwave again for 1 minute. (It should be done at this point, but depending on your microwave or how gooey you like your oatmeal you can heat it longer).
  • Enjoy!
