Here's what you need: all-purpose flour, unsalted butter, granulated sugar, large eggs, whole milk, cream cheese, sugar, heavy cream, strawberry

Provided by Rie McClenny

Categories     Desserts

Yield 6 servings

Number Of Ingredients 9

2 cups all-purpose flour
¼ cup unsalted butter, 1/2 stick, melted
3 tablespoons granulated sugar
3 large eggs
3 cups whole milk
8 oz cream cheese
3 tablespoons sugar
⅓ cup heavy cream
1 cup strawberry, thinly sliced

Steps:

  • In a large bowl, combine the flour, butter, sugar, and eggs.
  • Add ½ cup (120 ml) of milk at a time, stirring vigorously, making sure that each addition is completely incorporated into the batter and that the batter is smooth before adding more milk.
  • Strain the batter through a fine mesh sieve. The batter should be very liquidy and have no lumps. Rest in the fridge for at least 30 minutes or up to overnight.
  • Make the filling: In a medium bowl, combine the cream cheese and sugar. Using a hand mixer, beat until combined. Add the heavy cream and mix until smooth. Set aside.
  • In a 9.5 inch (24-cm) nonstick pan over medium heat, pour ⅓ cup (40 g) of the batter in the center, and swirl the batter around to the edges of the pan.
  • Cook the crepe until bubbles rise to the surface and the bottom is golden brown, about 3 minutes. Flip and cook on the other side until the edges start to crisp slightly, about 1 minute more.
  • Transfer the crepe to a wire rack to cool. Repeat with the remaining batter.
  • Stack the crepes on top of each other, then cut in half. Stack the halves on top of each other, and cut the stack into two even strips.
  • Place two crepe strips on a flat surface and spread the cream cheese mixture on both. Arrange sliced strawberries on one of the strips.
  • Roll up the first strip with the strawberries, then roll the second strip around it. Repeat with the rest of the strips of crepes, alternating between strips with strawberries and strips without. Once it becomes too large to roll, lay the cake on a serving platter.
  • Spread the remaining crepe strips with cream cheese and gently press them around the outside of the cake. Refrigerate for 15-30 minutes to set.
  • Enjoy!

Strawberry Banana Crepe Cake Recipe by Tasty image

Here's what you need: large eggs, milk, oil, vanilla, ripe bananas, sugar, salt, flour, unsalted butter, strawberries, heavy cream, powdered sugar

Provided by Julie Klink

Categories     Desserts

Yield 8 servings

Number Of Ingredients 12

4 large eggs
3 ½ cups milk
⅓ cup oil
2 teaspoons vanilla
3 ripe bananas, very ripe
½ cup sugar
½ teaspoon salt
2 cups flour
½ teaspoon unsalted butter
10 strawberries, stemmed, plus more, sliced for garnish
1 ¼ cups heavy cream
2 tablespoons powdered sugar

Steps:

  • In a food processor or blender, add the eggs, milk, oil, vanilla, bananas, sugar, salt, and flour. Blend until the batter is smooth without clumps.
  • In a medium nonstick skillet over medium heat, melt the butter and swirl so it coats the entire pan. Then pour in ¼ cup of crepe batter and tilt the pan to cover the entire bottom. Cook until the bottom surface of the crepe begins to brown and the edges are lacey, for about 3 minutes, and then flip. Repeat with the remaining crepe batter.
  • In a food processor or blender, add the strawberries and puree until smooth. Pour the strawberry puree through a sieve into a medium bowl to remove any seeds and clumps. Chill for 15 minutes until the puree is cold.
  • In a large bowl, using a whisk or hand mixer, beat the cream until thickened. Add the powdered sugar, and beat until soft peaks form. Add half of the strawberry puree, and blend with the hand mixer. Add the rest of the strawberry puree and gently fold it into the whipped cream with a spatula.
  • Dollop a bit of strawberry cream on a plate, then place the first crepe and frost with about ¼ cup of filling. Stack the remaining crepes on top of each other, with strawberry whipped cream between each layer. Spread the rest of the strawberry whipped cream on top of the last crepe.
  • Arrange slices of strawberry on top for garnish.
  • Slice and serve.
  • Enjoy!

Provided by Tikeyah Whittle

Categories     Desserts

Time 1h40m

Yield 8 servings

Number Of Ingredients 15

2 ¼ cups all purpose flour
7 tablespoons sugar
6 large eggs
3 cups whole milk, warm
¾ stick unsalted butter, melted
¼ teaspoon red food coloring
¼ teaspoon orange food coloring
¼ teaspoon green food coloring
7 cups whipped cream, divided
¼ cup strawberry puree
2 tablespoons freeze-dried strawberry, crushed, divided, plus 1 teaspoon
4 tablespoons passion fruit juice, strained, divided
2 tablespoons lime juice
3 tablespoons lime zest, divided
3 strawberries, halved lengthwise

Steps:

  • Make the crepes: In a large bowl, whisk together the flour and sugar. Add the eggs and whisk to incorporate. Gradually whisk in the warm milk and melted butter, alternating between additions.
  • Divide the batter evenly between 3 medium bowls. Add the red food coloring to a bowl and whisk until fully incorporated and the batter is evenly colored. Repeat with the orange and green food coloring and remaining bowls of batter.
  • Heat a medium nonstick skillet over medium heat. Pour in ¼ cup (40 G) of the green crepe batter and tilt the pan to cover evenly. Cook until the surface begins to gently bubble, 2-3 minutes, then flip and continue cooking for another minute, until cooked through. Repeat with the remaining batter, stacking each color crepe separately on a wire rack. Let the crepes cool for 15-20 minutes.
  • Make the whipped cream fillings: Add 2 cups (480 ml) of whipped cream to each of 3 medium bowls. Add the strawberry purée and 2 tablespoons crushed freeze-dried strawberries to a bowl of whipped cream and mix until well combined. Add the passion fruit juice to another bowl and mix until well combined. Add the lime juice and 2 tablespoons lime zest to the last bowl and mix until well combined.
  • To assemble, place a green crepe on a serving platter. Spread with 2 tablespoons of the lime filling. Continue stacking the green crepes and lime filling, then repeat with the orange crepes and passion fruit filling, then the red crepes and strawberry filling. Spread the remaining cup of whipped cream evenly over the top and sides of the cake.
  • Top the cake with the halved strawberries, then sprinkle with the remaining tablespoon of lime zest and remaining teaspoon of crushed freeze-dried strawberries. Drizzle with the remaining tablespoon of passion fruit juice.
  • Slice and serve.
  • Enjoy!

Tips:

  • For a smoother crepe batter, strain it through a fine-mesh sieve before cooking.
  • To prevent the crepes from sticking to the pan, use a non-stick pan or lightly grease it with butter or cooking spray.
  • Cook the crepes over medium heat to prevent them from burning.
  • If you don't have a crepe pan, you can use a regular frying pan. Just make sure it's large enough to fit the crepes.
  • To make the rose-shaped crepes, cut a circle out of the center of each crepe and then make small cuts around the edge. Overlap the cuts to create a rose shape.
  • To make the strawberry filling, use fresh strawberries for the best flavor.
  • If you don't have time to make the strawberry filling, you can use store-bought strawberry jam or preserves.
  • To assemble the cake, stack the crepes on top of each other with a layer of strawberry filling in between each layer.
  • Chill the cake for at least 30 minutes before serving to allow the flavors to meld.

Conclusion:

This strawberry rose crepe cake is a delicious and impressive dessert that is perfect for any occasion. It's relatively easy to make, but it does take some time to assemble. The cake can be made ahead of time and chilled, making it a great option for busy hosts.
