STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE
This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

Steps:
- In a tightly covered jar or container, shake all the dressing ingredients.
- Peel the jicama, removing the brown skin and a thin layer of the flesh just under the skin. The skin can sometimes be slightly tough. Cut about half of the jicama into about 1x 1/4-inch sticks to measure about 3/4 cup. Wrap remaining jicama and refrigerate for another use.
- Peel the kiwifruit. Cut lengthwise in half, then cut into slices. Rinse the strawberries with cool water and pat dry. Remove the leaves and cut the berries lengthwise into slices.
- Remove and discard the stems from the spinach leaves. Rinse the leaves in cool water. Shake off excess water and blot to dry with paper towels. Tear any large leaves into bite-size pieces.
- In a large salad bowl, place the spinach, strawberries, jicama sticks and kiwifruit slices. Shake the dressing again to mix ingredients. Pour the dressing over the salad ingredients, and toss with 2 large spoons or salad tongs. To keep salad crisp, serve immediately.

SPINACH STRAWBERRY SALAD
Spinach and strawberries what an odd combination for a recipe. That is what I thought before trying this the first time. Now I get many requests to bring this for dinner parties. The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.

STRAWBERRY SPINACH SALAD I
Someone brought this salad to a pot luck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

SIOUX LOOKOUT'S STRAWBERRY-SPINACH SALAD
From Chatelaine. Canadians may know of Stuart McLean's Vinyl Café program on CBC Radio. He first tasted this salad during a visit to Sioux Lookout in Ontario. After describing the salad on his programme, he was overwhelmed with requests for the recipe. It is suggested to cut back the Worcestershire considerably from the original recipe and to add more for your own taste. Worcestershire sauce is the cutback amount.

Steps:
- To make dressing, place oil, vinegar, Worcestershire, 1 tablespoon (optional) sugar, poppy seeds, green onion, salt and paprika in a jar or small container with a resealable lid. Shake well.
- Dressing can be made ahead and left at room temperature for up to 1 day or refrigerated, covered, for 2 to 3 days. Flavour improves as it sits.
- For the Almond Mixture, grease a large piece of foil and place on counter.
- Place almonds, sugar and water in a medium-size frying pan or saucepan. Cook over medium heat, stirring frequently, until sugar melts.
- As soon as sugar turns light golden, stir slowly and constantly with a wooden spoon until all sugar is an even golden shade and coats almonds, from 6 to 8 minutes.
- Immediately turn coated almonds out onto foil.
- Don't touch as they're extremely hot.
- Let cool, preferably to room temperature, then break into small pieces.
- If making ahead, nuts will keep well at cool room temperature or in the refrigerator for weeks. If your kitchen is warm and humid, it's best to store them in the refrigerator.
- Wash spinach then tear into bite-size pieces. Place in a large bowl, along with strawberries.
- If not serving right away, cover salad with a damp paper towel and refrigerate for up to 4 hours.
- Just before serving, toss salad with about half of dressing, then keep adding a little more dressing and tossing until spinach is lightly coated.
- Add almonds and toss.

BEST EVER SUMMER STRAWBERRY SPINACH SALAD
This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

SPINACH AND STRAWBERRY SALAD WITH FETA CHEESE
Besides the variations on the dressing, I added feta cheese to the salad. It was scrumptious! Even spinach haters ate it up! I made this for a party and there were a lot more servings as a buffet item than 8.
