2 sheets roll-out pie crust
2 tablespoons butter, melted
White sanding sugar, for top of crust
5 cups strawberries, washed and hulled
1/2 cup granulated sugar
3 tablespoons cornstarch
Pinch salt
Strawberry Whipped Cream, recipe follows, optional
3/4 cup heavy whipping cream
1/2 teaspoon vanilla extract
2 tablespoons confectioners' sugar
1/4 cup strawberry jam

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out 1 sheet of the pie crust and put in a 9-inch pie plate, crimping the edges for a pretty presentation. Roll out the other sheet and cut into 1/2-inch thick strips with a sharp knife or pastry wheel. Set aside.
  • In a medium bowl, mix together all of the filling ingredients and pour into the crust.
  • Arrange the strips over the top of the pie in a lattice pattern, tucking in the edges, or layer the circular shapes on top of the strawberries. Brush the top with the melted butter and sprinkle the sanding sugar. 3 ounces reduced-fat cream cheese
2 cups reduced-fat whipped topping, divided

1 (3 ounce) package strawberry Jell-O gelatin dessert

1 cup hot water

4 tablespoons (1/2 stick) unsalted butter, melted, plus additional for greasing
1 1/2 cups graham cracker crumbs (from about 10 full sheets of graham crackers)
2 tablespoons granulated sugar
1/2 teaspoon ground ginger
2 cups heavy cream
4 ounces cream cheese, softened
1 (14-ounce) can sweetened condensed milk
2 large lemons, 1 zested, both juiced
1 teaspoon kosher salt
1 pint raspberries, lightly crushed
1 pint strawberries, hulled and quartered
1 tablespoon dark brown sugar
1 teaspoon apple cider vinegar

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 10-inch pie dish and set side.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, ginger and melted butter. The texture should resemble wet sand. Press the crumbs into an even layer in the bottom and up the sides of the pie dish. Use the bottom of a measuring cup or glass to pack the bottom crust firmly. If necessary, transfer the mixture to a large bowl to allow for the whipped cream. Use a rubber spatula to fold the raspberries into the filling mix, then fold in the whipped cream.
  • To assemble: Spoon the filling into the completely cooled crust. Freeze the pie for at least 6 hours, up to 12 hours.
  • For the topping: In a medium bowl, toss the strawberries with the brown sugar and vinegar. Remove the pie from the freezer, top with the strawberry mixture and serve.

5 tablespoons cornstarch
7 ounces lemon-lime soda
1 quart whole strawberries
Red food coloring, if desired

  • For the crust: Spoon flour into measuring cup and level. Combine flour and salt in a medium bowl. Cut in shortening using a pastry blender until all flour is blended to form pea-sized chunks. Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough forms a ball. Press dough between hands to form a 5 to 6-inch pancake. Lightly flour rolling surface and rolling pin. 2 tablespoons unsweetened cocoa powder
2 tablespoons confectioners' sugar
5 tablespoons butter, melted
1/4 cup granulated sugar
3 tablespoons cornstarch
1 1/2 cups milk
1 cup white chocolate chips
1 teaspoon vanilla
3 drops red food coloring
12 ounces frozen Cool Whip, thawed
2 cups chopped strawberries (from two 1-pint baskets)
6 strawberries
1 tablespoon strawberry jelly
6 chocolate Hershey chocolate kisses, wrapping removed
white nonpareil decorative candies

Steps:

  • Crust: Mix crumbs, cocoa and sugar in medium-size bowl. Stir in melted butter until well mixed. Press mixture over bottom and up sides of 9-inch glass pie plate. Place in freezer until ready to fill.
  • Filling: Mix sugar and cornstarch in medium-size saucepan. Over medium heat, gradually stir in milk.   • To decorate top of pie: Spoon remaining nondairy topping into pastry bag fitted with #30 star tip. Pipe border around edge of pie. Pipe grid over top of pie. Arrange whole strawberries in squares on top of pie. Melt jelly in small microwave-safe bowl in microwave oven on high power, about 15 seconds. Brush jelly over kisses.
