Time 40m

Number Of Ingredients 16

½ cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
Pinch salt
4 tablespoons cold unsalted butter (cut into 1/2-inch pieces)
3 cups all-purpose flour
1 cup brown sugar (packed)
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup buttermilk*
1 egg
½ cup canola or vegetable oil
2 teaspoons vanilla extract
2 cups fresh strawberries (hulled and diced (1/2-inch dice or so))

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Prepare 12 standard-sized muffin cups - either grease the tins or use paper liners.

Using a pastry blender, a couple of butter knives, or your clean hands, cut the butter into the mixture until the topping is the texture of coarse crumbs (butter should be the size of small peas).
  • In a large bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • In a medium bowl, whisk together the buttermilk, egg, oil and vanilla.
  • Stir the wet ingredients into the dry ingredients just until combined. Batter will be thick.
  • Fold in the strawberries.
  • Divide the batter between the muffin cups. Sprinkle topping over the top - it works out to about 1 1/2 tablespoons per muffin.
  • Bake for about 20 minutes until the topping turns golden brown and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool for about five minutes, then remove muffins from the tins and place on a wire rack until cool enough to eat.

Provided by Kim

Categories     Chocolate Muffins

Time 1h

Yield 18

Number Of Ingredients 17

½ cup all-purpose flour
3 tablespoons firmly packed brown sugar
3 tablespoons white sugar
3 tablespoons unsweetened cocoa powder
⅛ teaspoon salt
5 tablespoons unsalted butter, melted and cooled slightly
½ teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
2 cups fresh strawberries, hulled and roughly chopped
¾ cup miniature semisweet chocolate chips
1 cup white sugar
1 large egg
4 tablespoons unsalted butter, melted and cooled
1 cup buttermilk, at room temperature
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease 18 cups of 2 standard 12-cup muffin tin or line cups with paper liners.
  • Combine flour, brown sugar, white sugar, cocoa powder, and salt in bowl for the streusel topping until well combined. Mix in melted butter and vanilla until mixture resembles wet sand. Set aside.
  • Mix together flour, baking powder, and salt for muffins in a large bowl until combined. Add strawberries and chocolate chips and stir until evenly distributed in the flour mixture.

  • Spoon batter into the prepared muffin cups and sprinkle streusel topping evenly over each muffin, about 1 to 1 1/2 tablespoons per muffin.
  • Place pans into the preheated oven and bake until edges of the muffins are golden and tops spring back lightly when touched, 22 to 27 minutes. Allow muffins to cool in the pan for 10 to 15 minutes before carefully transferring them to a wire rack to cool completely.

Tips:

  • To ensure your muffins have a moist and tender crumb, make sure not to overmix the batter. Overmixing can result in dry, tough muffins.
  • For the best streusel topping, use a combination of brown sugar, white sugar, flour, butter, and spices. This combination will create a crunchy, flavorful topping that complements the sweet strawberries.
  • If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • To help the muffins rise evenly, preheat your oven to the correct temperature before baking. This will prevent the muffins from sinking in the center.
  • For a golden brown streusel topping, sprinkle the muffins with a little extra sugar before baking.

Conclusion:

These Strawberry Sweetheart Streusel Muffins are the perfect way to celebrate Valentine's Day or any special occasion. They're moist, tender, and full of sweet strawberry flavor. The streusel topping adds a crunchy, flavorful touch that makes these muffins irresistible. Whether you're serving them for breakfast, brunch, or dessert, these muffins are sure to be a hit.
