BROILED SALMON WITH HOMEMADE TERIYAKI GLAZE

Broiled Salmon with Homemade Teriyaki Glaze image

Simple salmon cooked under the oven's broiler with a homemade teriyaki glaze. I really like how well teriyaki flavor pairs with salmon but store-bought teriyaki sauce is so thin and doesn't stay on but runs underneath the fish. I came up with this homemade version that is more of a glaze that stays on the fish.

Tips:

  • To ensure the salmon is cooked evenly throughout, use a sharp knife to score the skin side of the fillet before cooking. This will help the marinade penetrate the fish and prevent it from curling up.
  • If you don't have a grill, you can also cook the salmon in a grill pan over medium-high heat. Just be sure to grease the pan well to prevent the fish from sticking.
  • To make the teriyaki glaze, you can use store-bought teriyaki sauce or make your own by combining soy sauce, mirin, sake, and brown sugar in a saucepan and bringing to a simmer.
  • If you don't have strawberries on hand, you can substitute another type of fruit, such as pineapple, mango, or peaches.
  • Serve the salmon with steamed rice, roasted vegetables, or a salad.
