APPLESAUCE BARS

These light and tasty dessert bars are super moist and low in fat and sugar. Ideal for snacks or a light dessert. Adopted from Desserts for Diabetics cookbook.

Provided by CarolAT

Categories     Dessert

Time 45m

Yield 18 serving(s)

Number Of Ingredients 11

2 cups all-purpose flour
1/3 cup sugar
3/4 cup dry sugar substitute (I used Splenda)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 1/2 cups hot unsweetened applesauce
2 teaspoons baking soda
1/3 cup vegetable oil
1/4 cup walnuts, chopped (I used pecans)
1/4 cup raisins

Steps:

  • Place flour, sugar, dry sugar substitute, cinnamon, nutmeg, and cloves in a mixer bowl and mix at low speed to blend well.
  • Combine hot applesauce and baking soda. (Don't try to be modern and use cold applesauce and mix the baking soda with the flour; it doesn't work as well that way.).
  • Add the applesauce mixture, along with oil, nuts, and raisins, to flour mixture.
  • Mix at medium speed until flour is moistened and batter is creamy.
  • Spread batter evenly in a 9 x 13-inch cake pan that has been sprayed with cooking spray or greased well with margarine or butter.
  • Bake at 375 degrees for 20 or 25 minutes, or until bars pull away from the sides of the pan and a cake tester comes out clean from the center. Cool on a wire rack.

Tips:

  • Use ripe apples: Riper apples are sweeter and have a more intense flavor, which will make your applesauce bars more delicious.
  • Peel and core your apples: Peeling and coring your apples will help to remove any unwanted bitterness or tartness from the applesauce bars.
  • Use a variety of apples: Using a variety of apples will give your applesauce bars a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn apples.
  • Add spices to your applesauce: Spices like cinnamon, nutmeg, and ginger can help to enhance the flavor of your applesauce bars. You can also add a pinch of salt to help balance out the sweetness of the apples.
  • Don't overcook your applesauce: Overcooking your applesauce will make it mushy and bland. Cook it just until the apples are softened and can be easily mashed with a fork.
  • Use a good quality butter: The butter you use in your applesauce bars will make a big difference in the flavor. Use a high-quality butter that is unsalted and has a rich, creamy flavor.
  • Chill your applesauce bars before serving: Chilling your applesauce bars before serving will help them to set and will make them easier to slice.
