3 ounces spinach, stemmed, and washed (about 3 cups)
1 cup ricotta cheese
1/4 cup grated Asiago

6 chicken breasts, boneless, tenderloin attached (about 3 pounds)
1 cup unsalted butter, room temperature
3 cloves garlic, minced
1 tablespoon chopped fresh rosemary leaves

1 tablespoon chopped fresh marjoram leaves

Steps:

  • Preheat oven to 450 degrees F.

2 tablespoons butter, divided
1 teaspoon reduced-sodium chicken bouillon granules
1/4 cup boiling water
3 cups soft bread crumbs
3 tablespoons fat-free milk
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary, crushed

8 boneless skinless chicken breast halves (4 ounces each)

6 skinless, boneless chicken breast halves - pounded thin
1 (8 ounce) bottle Italian-style salad dressing
8 slices of stale wheat bread, torn
¾ cup grated Parmesan cheese
1 teaspoon chopped fresh thyme
⅛ teaspoon pepper
1 ½ cups feta cheese, crumbled
½ cup sour cream
1 tablespoon vegetable oil
3 cloves garlic, minced
4 cups chopped fresh spinach
1 bunch green onions, chopped
1 cup mushrooms, sliced
1 (8 ounce) jar oil-packed sun-dried tomatoes, chopped

Steps:

  • Bake, uncovered, in a preheated oven for 25 minutes.

4 boneless chicken breast halves
4 ounces soft cheese such as fresh goat's cheese, or ricotta
1/4 cup chopped herbs (one of a kind or a mix) such as chives, parsley, tarragon, dill, mint or basil

2 tablespoons olive oil

  • With a slender knife cut a 3-inch pocket along length of thickest side of chicken (or have a butcher do this for you). 1 cup diced ham
