2 cups almonds (with skin)
1/3 cup water
1 1/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon

SUGAR 'N' SPICE NUTS

Sugar 'n' Spice Nuts image

To tell the truth, I can't recall where this recipe came from. It's been a regular in my holiday baking, though, for many years. Between Thanksgiving and New Year's, I hand these out to almost everybody-even the mailman's been known to find a batch in the mailbox! I moved from a big city as a bride. My husband soon persuaded me to enter baked goods at our county fair-now, our son, 8, is my cookie tester, and our daughter, 6, is the egg beater.

Yield Makes about 4 cups

Number Of Ingredients 5

1 large egg white
1 teaspoon water
4 cups mixed salted roasted nuts (about 1 1/4 pound)
1 cup sugar
1 1/2 tablespoons cinnamon or pumpkin pie spice

Steps:

  • Preheat oven to 250°F.
  • Whisk together egg white and water in a large bowl until frothy and stir in nuts. Stir together sugar and cinnamon and stir into nuts, coating well. Spread nuts in a lightly buttered large shallow pan and bake in middle of oven until dry, about 50 minutes. Cool and break into bite-size chunks.

Tips:

  • To make the sugar syrup, use a heavy-bottomed saucepan to prevent scorching.
  • Make sure the sugar syrup reaches the hard-crack stage before adding the almonds.
  • Stir the almonds constantly in the sugar syrup to ensure they are evenly coated.
  • Spread the almonds out on a parchment paper-lined baking sheet to cool and harden.
  • If you don't have a candy thermometer, you can test the sugar syrup by dropping a small amount into a glass of cold water. If it forms a hard, brittle ball, the syrup is ready.
  • For a variation on this recipe, try using other nuts, such as pecans, walnuts, or hazelnuts.
  • You can also add spices such as cinnamon, nutmeg, or ginger to the sugar syrup for extra flavor.
  • These nuts are a great gift for friends and family during the holidays.

Conclusion:

Sugar and Spice Nuts, also known as German Almonds, are a sweet and crunchy treat that is perfect for any occasion. They are easy to make and can be stored for up to two weeks. So next time you are looking for a special treat to make, give this recipe a try. You won't be disappointed!
