  • Preheat your oven to 325 and prep a pan for nonstick
  • Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
  • In another bowl, beat together the liquid, oil, and the eggs. Set this aside
  • Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.

1 ¾ cups graham cracker crumbs
½ cup butter
½ teaspoon ground cinnamon
1 (.6 ounce) package sugar free lemon flavored Jell-O®
1 cup boiling water
1 (8 ounce) package reduced fat cream cheese
2 teaspoons vanilla extract
1 cup frozen light whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.

1 1/4 teaspoons apple pie spice, divided
1 cup sugar substitute, for baking such as Splenda Sugar Blend for Baking*
1 tablespoon sugar substitute, for baking such as Splenda Sugar Blend for Baking*
2 cups cake flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/3 cup vegetable oil
1/3 cup egg substitute
1 teaspoon pure vanilla extract
1 cup butter pecan glucerna shake
1 medium granny smith apple, sliced thin for top of cake

Steps:

  • Preheat the oven to 350 degrees F. Lightly mist an 8 x 8 baking pan with nonstick vegetable oil spray.
  • Place the diced apples in a microwave-safe container and microwave for 2 minutes. Cool.

2 mcintosh apples, peeled, cored and finely chopped
8 ounces cream cheese
3 tablespoons unsweetened apple butter
2 tablespoons frozen apple juice concentrate, thawed

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour one 9 inch square baking pan.
