4 quarts air-popped popcorn
3 tablespoons butter
1/4 cup sugar
1 tablespoon water
1 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Place popcorn in a large roasting pan coated with cooking spray. In a small saucepan, melt butter over low heat. Add the sugar, water, cinnamon and salt; cook and stir over low heat until sugar is dissolved. , Pour over popcorn; toss to coat. Bake, uncovered, at 300° for 10-15 minutes. Serve immediately.

3 tablespoons confectioners' sugar
1 tablespoon paprika
1 teaspoon kosher salt
3/4 teaspoon garlic powder
3/4 teaspoon ground cumin
3/4 teaspoon cayenne pepper
1/4 cup coconut oil
16 cups hot, freshly popped popcorn

Steps:

  • Stir the confectioners' sugar, paprika, salt, garlic powder, cumin and cayenne together in a small bowl. Heat the coconut oil in a very large pot with a lid over medium heat. Add the popcorn and half of the sugar mixture, cover the pot and shake to coat. Add the remaining sugar mixture and continue to shake until well coated. Serve immediately.

2 tablespoons vegetable oil
1/2 cup popcorn kernels
Salt
1/4 cup butter
1/4 cup maple syrup
1/2 teaspoon cayenne
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Pinch chili powder

Steps:

  • In a heavy pot on high heat, add the oil and 1 kernel of popcorn; then cover. When the kernel pops, add the rest of the kernels and cover. Pop while gently sliding and shaking the pot back and forth to move kernels around inside. Cook until the popping slows dramatically to 1 or 2 pops per second. Remove the popcorn from the pot and pour on top of a wire rack in a parchment-lined baking sheet. Lightly salt. Using the same pot, add the butter, maple syrup, cayenne, cumin, cinnamon and chili powder and stir to combine. Cook over medium-high heat until it bubbles. Gently pour over the popcorn, allow to cool slightly, then tranfer to a bowl, toss with tongs, and serve immediately.

1/4 cup vegetable oil
1/4 cup sugar
1/2 to 1 teaspoon chili powder, as desired
1/2 cup unpopped popcorn (not microwave popcorn)

Steps:

  • In 4-quart saucepan, heat oil over medium-high heat. Stir in sugar and chili powder. Add popcorn, and shake to coat popcorn evenly.
  • Cover pan, and start shaking back and forth. Keep shaking to prevent popcorn and sugar from burning. After a few minutes, you will hear the popcorn start to pop. Keep shaking until the popping has slowed to once every 2 to 3 seconds. Remove from heat, and immediately pour into large bowl. Cool, stirring occasionally to break up clumps. Serve warm.

1 gallon popped popcorn (I measure by a gallon ice cream container)
2 tablespoons butter
2 cups sugar
1/2 cup water
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • Measure out 1 gallon of popped popcorn and lay out on wax paper.
  • Melt butter, sugar, and water on stove until temperature reaches 245°F (about 5 minute after it starts boiling).
  • Remove from heat and add salt and vanilla.
  • At this point you can add food coloring to make it colorful!
  • Pour mixture over popped popcorn and stir occasionally until completely cooled.
  • ENJOY!

JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE



Jamie's Spiced Sugar and Christmas Popcorn Recipe image

This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

3 fresh bay leaves
2 oranges, zest of, finely grated
2 lemons, zest of, finely grated
6 whole cloves
1/2 teaspoon ground cinnamon
whole nutmeg (10 gratings)
1 vanilla pod, halved lengthways
1 kg caster sugar, unrefined if possible
olive oil
1 slice butter
250 g popcorn
6 tablespoons spiced sugar

Steps:

  • SPICED SUGAR:.
  • Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
  • Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
  • Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
  • POPCORN:.
  • Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
  • Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.
