3 tablespoons olive oil, divided
1 medium zucchini, cut into 3/4-inch pieces
1 medium yellow summer squash, cut into 3/4-inch pieces
1 medium onion, chopped
1 medium eggplant, peeled and cut into 3/4-inch pieces
2 cups sliced fresh mushrooms
2 garlic cloves, minced
3/4 teaspoon crushed red pepper flakes
1 can (28 ounces) crushed tomatoes
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1 tablespoon minced fresh parsley
3 tablespoons minced fresh basil or 1 tablespoon dried basil, divided
1 package (14-1/2 ounces) uncooked multigrain spaghetti
1/2 cup shredded Parmesan cheese

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat. Add zucchini and yellow squash; cook and stir until tender. Remove from pan., In same pot, heat 1 tablespoon oil over medium-high heat. Add onion, eggplant and mushrooms; cook and stir until tender. Add garlic and pepper flakes; cook 1 minute longer. Add tomatoes, salt and pepper. Stir in oregano, parsley and half of the basil; bring to a boil. Reduce heat; simmer, uncovered, 15 minutes, stirring occasionally., Meanwhile, cook spaghetti according to package directions. Drain; add spaghetti and squash to vegetable mixture. Drizzle with remaining oil; toss to combine. Top with cheese and remaining basil.

1 cup sliced fresh carrots
1 tablespoon olive oil
1/2 teaspoon minced garlic
1 cup fresh broccoli florets
1 cup sliced yellow summer squash
1 cup chopped green pepper
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh plum tomatoes
Grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. , Meanwhile, in a large nonstick skillet, saute carrots in oil until crisp-tender. Add garlic; cook 1 minute longer. ⅓ cup olive oil
2 tablespoons red wine vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
salt and pepper to taste
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 carrots
1 ½ cups broccoli florets, lightly steamed or blanched
4 cups uncooked rotini pasta

Steps:

  • Mix together the oil, vinegar, basil, oregano, salt and pepper. Set aside.
  • Bring a large pot of salted water to boil; add rotini and bring to a boil again. Cook until rotini is al dente; drain well. Return the rotini to the pot.
  • While rotini is cooking heat oil in a frying pan and saute red bell pepper, green bell pepper, garlic and carrots. Cook until vegetables are softened. Place the broccoli in the frying pan and cook another 2 minutes.
  • Pour the cooked vegetables into the pot with the pasta. Pour the vinaigrette over the pasta and vegetables. Toss to distribute vegetables and vinaigrette evenly.

1 pound fettuccine pasta
1 pound asparagus, trimmed and cut into 1 1/2-inch pieces
1 cup frozen peas
2 cups chopped fresh basil
1 cup chopped fresh mint
½ cup chopped fresh parsley
1 (4 ounce) package crumbled feta cheese with herbs
3 scallions (green onions), chopped
2 tablespoons extra-virgin olive oil
¾ teaspoon salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes.
  • While fettuccini is boiling, place asparagus and peas into a steamer insert and place insert over the pot of fettuccine. Steam vegetables until tender, 6 to 8 minutes. Remove steamer insert and drain fettuccine.

2 tablespoons olive oil
4 cups small zucchini (quartered lengthwise and sliced)
1 garlic clove, minced
4 cups chopped tomatoes
1/4 cup white wine (I use veggie stock)
1/3 cup chopped fresh basil
1/4 cup chopped fresh chives
1/4 cup chopped flat leaf parsley
2 tablespoons chopped fresh marjoram
salt and pepper
freshly grated parmesan cheese

Steps:

  • Cook pasta in salted boiling water until tender but as firm as you like; drain and keep hot.
  • Meanwhile, in large skillet over medium heat, heat oil.
  • Add zucchini and garlic; cook for 5 minutes, stirring frequently.
  • Add tomatoes and wine, cook, stirring frequently, for 5 minutes or until sauce thickens.
  • Stir in herbs; simmer for 5 minutes.

1 pound linguine

1/2 cup extra-virgin olive oil
3/4 teaspoon salt
3/4 teaspoon black pepper
4 1/2 ounces feta, crumbled (1 cup)
1/2 cup coarsely chopped fresh flat-leaf parsley
3 scallions, thinly sliced

Steps:

  • Cook asparagus in a 6- to 8-quart pot of boiling well-salted water until just tender, 4 to 6 minutes. Transfer with a slotted spoon to a large heatproof bowl, then add peas to boiling water and cook 2 minutes. Transfer peas with slotted spoon to bowl with asparagus, then add linguine to boiling water and cook until al dente.
  • While linguine cooks, pulse basil, mint, oil, salt, pepper, and 1/2 cup feta in a food processor until chopped, then add to vegetables.

4 ounces haricots verts and yellow wax beans (or a mix of other fresh beans), trimmed and halved crosswise
Coarse salt, preferably sea salt
1 pound short, tubular pasta, such as mezze maniche, rigatoni, or penne
1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 cup whole raw almonds
1 pound mixed summer squashes, such as zucchini, cut into 1/2-inch-thick rounds, and patty pan, quartered if large
3 tablespoons honey
1 tablespoon plus 1 teaspoon sherry vinegar
2 jalapeno chiles, ribs and seeds removed if desired, finely chopped
Freshly ground pepper
1/2 cup finely chopped fresh mint
3 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh thyme
4 squash blossoms, petals only, coarsely chopped (optional)

Steps:

  • Cook beans in a large pot of salted boiling water until crisp-tender, 3 to 4 minutes. Using a wire-mesh skimmer, transfer beans to a large bowl, reserving water in pot. Add pasta to boiling water, and cook until al dente. Drain, and add to beans. Stir in 2 tablespoons oil.
  • Toast almonds in a dry skillet over medium-high heat, shaking occasionally, about 3 minutes. Transfer to a cutting board, and chop. Add to pasta mixture. Return skillet to medium-high heat, and add remaining 2 tablespoons oil and squashes. Cook until squashes are golden brown, about 2 minutes. Stir, and continue to cook, turning occasionally, until just tender, 3 to 4 minutes more. Add to pasta mixture.
  • Return skillet to medium heat, and add honey. Bring to a simmer and stir. Add vinegar and jalapenos. Cook until mixture is reduced by half but still slightly runny, about 1 minute. Pour over pasta mixture, and toss. Season with salt and pepper, and drizzle with oil. Stir in mint, cilantro, and thyme, and squash blossoms if desired. Serve immediately, or refrigerate up to 4 hours and serve at room temperature.
