Time 6h20m

Yield 10 serving(s)

Number Of Ingredients 9

1 (9 ounce) package refrigerated cheese tortellini, cooked according to package directions, drained well
5 roma tomatoes, washed and cut into large chunks
1/2 English seedless cucumber, unpeeled, cut into large chunks
1 (6 ounce) can black olives, drained and sliced
1/4 cup mild pepperoncini pepper, drained and sliced
1/2 cup reduced-fat Italian salad dressing (or Greek)
3 green onions, chopped
1/4 cup fresh parsley, chopped
4 ounces reduced-fat feta cheese, crumbled

Steps:

  • Combine all ingredients in a large serving bowl.
  • Cover with plastic wrap and refrigerate several hours, until well chilled.

Tips:

  • Use a variety of summer vegetables. This salad is a great way to use up all the fresh produce that's in season during the summer months. Try using a mix of different colors and textures of vegetables, such as red and yellow bell peppers, zucchini, corn, and tomatoes.
  • Choose a flavorful dressing. The dressing is what really brings this salad together, so be sure to use a dressing that you love. A simple vinaigrette made with olive oil, vinegar, and herbs is a good option, or you can try a more flavorful dressing, such as a pesto or a creamy dressing made with Greek yogurt.
  • Don't overcook the tortellini. Tortellini should be cooked al dente, or slightly firm to the bite. If you overcook the tortellini, it will become mushy and ruin the salad.
  • Let the salad chill before serving. This will allow the flavors to meld together and the salad to become more refreshing.

Conclusion:

This summer red pepper tortellini salad is a delicious and refreshing dish that's perfect for a summer party or potluck. It's easy to make and can be tailored to your own tastes. So next time you're looking for a light and healthy summer salad, give this recipe a try.
