SUMMERY GARBANZO BEAN SALAD (VEGAN FRIENDLY)
Courtesy of my wonderful niece The Next Jeneration. She said the inspiration for this recipe is from a local deli in her neighborhood. All amounts given for the ingredients are estimated. Although I dislike thyme, it didn't bother me at all in this recipe. Perhaps I'm warming up to it...? Delicious Mediterranean/French/Greek/Middle Eastern flavors!

Steps:
- Place drained garbanzo beans in a non-reactive salad bowl. Now add the remaning salad ingredients to the bowl.
- Whisk together the dressing and pour over the bean mixture. Stir gently.
- Cover and refrigerate several hours for best flavor. Serve at *room temperature*. The flavor of the salad we discovered is best the next day after it has marinated overnight.
- Garnish with freshly parsley and/or lemon slices if desired. I think the salad would taste delicious served over a bed of arugula or baby spinach.

Tips:
- Choose fresh, high-quality beans: Look for beans that are plump and firm, with no signs of bruising or wrinkling. Fresh beans will have a brighter flavor and a better texture than canned beans.
- Soak the beans overnight: Soaking the beans overnight will help to soften them and reduce their cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
- Cook the beans until they are tender but still hold their shape: Overcooked beans will become mushy and lose their flavor. To prevent this, check the beans frequently towards the end of the cooking time and remove them from the heat as soon as they are tender.
- Use a variety of beans: Don't be afraid to mix and match different types of beans in your salad. This will add variety to the flavor and texture of the salad.
- Add fresh herbs and vegetables: Fresh herbs and vegetables will add brightness and flavor to your salad. Some good options include parsley, cilantro, basil, tomatoes, cucumbers, and bell peppers.
- Use a flavorful dressing: The dressing is an important part of any salad, so make sure to use one that you enjoy. A simple vinaigrette made with olive oil, vinegar, and Dijon mustard is a good option, but you can also get creative and try different types of dressings, such as a creamy dressing made with yogurt or sour cream.
Conclusion:
Bean salads are a delicious and healthy way to enjoy beans. They are easy to make and can be customized to your liking. With a variety of beans, vegetables, and dressings to choose from, there are endless possibilities for creating delicious bean salads. So next time you're looking for a light and refreshing meal, give one of these bean salad recipes a try.
