SUNDAY CHICKEN

Sunday Chicken image

This was my mother's favorite recipe for Sunday-hence the name. It makes an excellent recipe for Sunday dinner, because it can be prepared ahead of time and left to bake while you attend church. The leftovers also freeze well. -Don Harksen, Dothan, Alabama

SOUTHWESTERN CHICKEN AND RICE BAKE

Southwestern Chicken and Rice Bake image

This is from southernfood.about.com. It's a great dish for using leftover chicken and rice, and it is VERY easy. Don't let the number of ingredients fool you - as a lot of them are spices. I used almond milk and whole wheat flour, but regular milk and all purpose flour can be used (respectively). You can also use less ground red pepper if you don't want it quite so hot.

SUNDAY CHICKEN CASSEROLE

Provided by Realtor by day

Categories     Chicken Breast

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 12

4 chicken breasts, boneless, skinless
3 cups water
1 tablespoon salt (kosher works best here)
6 tablespoons butter
1 tablespoon flour
1 cup sour cream
3/4 cup water
1 chicken bouillon cube
1 cup mushroom, sliced
1 (6 1/4 ounce) package uncle ben's flavorful rice parmesan & butter
1/2 cup mozzarella cheese, shredded
paprika

Steps:

  • Cook the rice according to the package instructions.
  • While the rice cooks, dissolve the tablespoon of salt in the 3 cups of water in a bowl large enough to hold the chicken.
  • Wash the chicken breasts, fillet them in half to make them thinner and soak them in the bowl of salt water for about 15 minutes. After soaking, pat them dry with a paper towel.
  • In a large skillet, melt the butter over medium-high heat and cook the chicken turning once until both sides appear to be cooked, about 5 minutes each side. When done, remove from pan and set aside.
  • Preheat oven to 350 now.
  • Stir in flour and sour cream, whisking to remove any lumps. Stir in the 3/4 cup water and bouillon cube, mixing well to combine (I usually dissolve the cube in the water before I add these). Add the mushrooms and cook, stirring until sauce thickens, about 8 minutes.
  • Spread the cooked rice in the bottom of a 13x9 baking dish, lay the chicken on top, pour the mushroom sauce over the top and sprinkle the mozzarella cheese evenly over top. Sprinkle lightly with paprika.
  • Bake 30 minutes. Yum!

Tips:

  • Mise en place: Before you start cooking, have all your ingredients and equipment ready to go. This will make the cooking process much smoother and easier.
  • Use fresh ingredients: Fresh ingredients will always yield the best results. When possible, use organic or local ingredients.
  • Don't overcrowd the pan: When cooking chicken or vegetables, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Season your food: Don't be afraid to season your food liberally. Salt, pepper, and garlic are always a good starting point.
  • Cook the chicken thoroughly: Chicken should be cooked to an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). You can check the temperature with a meat thermometer.
  • Let the chicken rest: After cooking the chicken, let it rest for a few minutes before cutting into it. This will allow the juices to redistribute throughout the chicken, resulting in a more moist and flavorful dish.
  • Use a variety of vegetables: Don't be afraid to get creative with the vegetables you use in your chicken rice bake. Some good options include carrots, celery, onions, bell peppers, and broccoli.
  • Add some herbs and spices: Herbs and spices can add a lot of flavor to your chicken rice bake. Some good options include rosemary, thyme, oregano, paprika, and cumin.
  • Don't overcook the rice: Rice should be cooked according to the package directions. Overcooked rice will be mushy and unappetizing.
  • Serve immediately: Chicken rice bake is best served immediately after it is cooked. The chicken will be juicy and tender, and the rice will be fluffy and flavorful.

Conclusion:

Chicken rice bake is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover chicken, and it can also be made with a variety of vegetables and herbs. Whether you are looking for a quick and easy weeknight meal or a special occasion dish, chicken rice bake is sure to please everyone at the table.
