Number Of Ingredients 17

1 cup butter (softened)
1 cup vegetable or canola oil
1 cup granulated sugar
1 cup powdered sugar
2 large eggs
2 tsp. vanilla
2 tsp. caramel extract
4 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
3/4 cup butter
1 1/2 cup packed brown sugar
1 tsp. vanilla
1 tsp. caramel extract
1/2 cup heavy cream
2 1/2 - 3 cups powdered sugar
1/2 cup pecan halves and/or chopped pecans

Steps:

  • In a large mixing bowl, beat the butter, oil, and sugars until combined.
  • Beat in eggs, vanilla, and caramel extract.
  • In a large bowl, whisk together flour, baking soda, and cream of tartar.
  • Gradually add flour mixture to the butter mixture, beating until just combined after each addition. Do not overmix.
  • Line baking sheets with parchment paper or silicone baking mats.
  • Drop dough by small teaspoonfuls onto baking sheets.
  • Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
  • Remove to wire racks to cool.
  • In a large saucepan over medium heat, melt the butter.
  • Add brown sugar, vanilla, and caramel extract, whisking to combine.
  • Bring to a simmer and cook until sugar is dissolved, stirring frequently, about 3 minutes.
  • Add heavy cream.
  • Bring to a boil, stirring constantly, then remove from heat.
  • Cool for 3 minutes.
  • Whisk or beat in 2 1/2 cups powdered sugar.
  • Add additional powdered sugar, as needed, to achieve a thick, but spreadable consistency. Frosting sets quickly, but you can microwave it for 7-8 seconds (that's it) to thin it back out for spreading, as needed.
  • Spread icing over cookies, sprinkle with pecan halves or chopped pecans, and allow to set.

PRALINE PECAN CRUNCH SNACK MIX

Praline Pecan Crunch Snack Mix image

In our family, we call this "Crunchy-Crunchy." My mother-in-law makes a big batch of this every Christmas. We receive it in the big box of gifts and my youngest is very excited to see "Grandma's Crunchy-Crunchy" snack mix. I sometimes make it myself, but it's more special to receive it from Grandma, you know? It is great for gift giving in a nice air-tight plastic container. Great to put out for a sweet snack, any time of the year! Note: I have added a little salt to the recipe as a personal preference. If you want to leave it out as the original recipe calls for, you can do so. Enjoy!

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your praline pecan crunch. Use real butter, pure vanilla extract, and fresh pecans.
  • Don't overcook the sugar mixture. Keep a close eye on it and remove it from the heat as soon as it reaches a light amber color. If you overcook it, the praline pecan crunch will be too hard.
  • Be careful when adding the pecans. The sugar mixture will be very hot, so be sure to add the pecans slowly and carefully. Stir constantly to coat the pecans evenly.
  • Let the praline pecan crunch cool completely before breaking it into pieces. This will help to prevent it from crumbling.
  • Store the praline pecan crunch in an airtight container at room temperature for up to 2 weeks. You can also freeze it for up to 3 months.

Conclusion:

Praline pecan crunch is a delicious and easy-to-make treat that is perfect for any occasion. With its sweet, buttery flavor and crunchy texture, it is sure to be a hit with everyone who tries it. So next time you are looking for a special dessert, give praline pecan crunch a try.
