3 cups milk
1/3 cup sugar
3 Tbsp. MINUTE Tapioca
3 oz. BAKER'S Semi-Sweet Chocolate
1 tsp. vanilla

Steps:

  • Beat egg, milk, sugar and tapioca with wire whisk in medium saucepan until well blended; let stand 5 min. Add chocolate.
  • Bring to full rolling boil on medium heat, stirring constantly. Remove from heat. Stir in vanilla.
  • Cool 20 min. (Pudding thickens as it cools.) Stir. Serve warm or chilled. Stir before serving.

3 c milk-room temperature
3/4 c sugar
1/4 c cocoa powder
1/4 c corn starch
pinch of salt
1 Tbsp softened butter
2 tsp vanilla bean paste or exract

Steps:

  • 1. Using a microwave safe dish, combine the sugar, corn starch, cocoa powder & salt together, and stir till blended well together, with no lumps in cocoa.NOTE: CAN ALSO SIFT INGREDIENTS TOGETHER IF DESIRED.
  • 2. Add in the milk, one cup at a time and whisk briskly till well blended.
  • 3. Cook in microwave for 3 minutes, then remove and stir. Add back to microwave and cook an additional 3 minutes and stir again. Then repeat one final time. NOTE: IF MILK WAS AT ROOM TEMPERATURE, YOU MAY NOT NEED THE ENTIRE FINAL 3 MINUTES. SO CHECK CLOSELY.
  • 4. Remove from microwave, and add butter and vanilla & beat till blended.
  • 5. Serve warm as my husband prefers with whipped topping and chocolate sprinkles if desired. Or cover with plastic wrap over the top to prevent a film & serve chilled.

3 cups milk (can use skim)
3 tablespoons minute tapioca
bananas, slices raspberries (optional) or whipped cream (optional)

Steps:

  • Pour milk in a large deep microwave safe bowl. (I use a 6 cup glass measuring cup).
  • Add the chocolate pudding powder and whisk to combine.
  • Stir in the tapioca and allow to sit for 5 minutes to soften.
  • Microwave on high 8 minutes stirring every two minutes.
  • Top with fruit and whipped cream if desired.

1/2 cup tapioca (small pearl old-fashioned)
1 cup milk
3 cups milk
2/3 cup maple syrup
2 eggs, beaten
2 teaspoons vanilla

Steps:

  • Soak 1/2 cup tapioca in 1 cup of milk overnight in the refrigerator.
  • Pour 3 cups of milk into a 2 quart microwave-safe glass bowl or measuring cup. Add the soaked tapioca and maple syrup with a whisk. Microwave on high for 6 minutes and stir thoroughly with a whisk.
  • Microwave on high again for 2 minutes, whisk and microwave 2 more minutes. Do not let it boil over.
  • Add eggs and microwave 2 minutes. Whisk and microwave 2 more minutes.

My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

1/3 cup sugar
2 cups milk (sub soymilk to make it vegan)
1/3 cup unsweetened cocoa powder

2/3 cup sugar
3 tablespoons minute tapioca
2 3/4 cups milk
1 egg, well beaten
tiny pinch salt
2 teaspoons vanilla, added later

Steps:

  • Mix sugar, tapioca, milk, egg and salt in large bowl. Let stand 5 minutes. (Use a bowl where your ingredients only come up half way so there's room to boil without boiling over.).
  • Cook at full power, stirring every 2-3 minutes until mixture comes to a full boil. Should take about 10 to 12 minutes.
  • Stir in vanilla and cool. Pudding thickens as it cools.
  • If desired, place plastic wrap on surface of pudding as it cools.
  • NOTE: you can make this on the stovetop if you prefer.
