Time 1h35m

Yield 8

Number Of Ingredients 15

1 ½ pounds ground beef
1 ⅓ cups dry bread crumbs
1 egg, slightly beaten
½ onion, finely chopped
¼ cup milk
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh garlic
1 ½ teaspoons Italian seasoning
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
1 yellow onion, chopped
1 (6 ounce) package portobello mushroom caps, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, bread crumbs, egg, 1/2 a chopped onion, milk, Worcestershire sauce in a bowl; season with garlic, Italian seasoning, dry mustard, salt, and black pepper. Transfer the meat mixture to a piece of waxed paper or aluminum foil and flatten to a 1/2-inch thick rectangle.
  • Melt butter in a skillet over medium heat. Cook and stir yellow onion and mushrooms in melted butter until the onion is translucent and mushrooms soft, about 5 minutes. Remove from heat to cool.
  • Spread filling mixture into center of meat rectangle. Sprinkle Cheddar cheese over filling, leaving a bit of space at one end for easier rolling and sealing. Pick up the edge of the waxed paper or foil to roll the flattened meat into a log around the filling. Seal the ends and seam and place the loaf into a 9x5-inch loaf pan.
  • Bake in the preheated oven until oil from the cheese begins to pool, about 30 minutes. Drain oil and continue baking until the meat is no longer pink in the center, about 30 to 60 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

HAM STUFFED ROLLS

Ham Stuffed Rolls image

These are excellent little appetizers to take to a potluck or get together. I found this original recipe on the back of Marshall's homemade yeast rolls, but adapted it a bit. Use Parker House style rolls, or any other soft, dinner type will do. We like Martin's Party Potato Rolls best. Have not tried them with homemade or Pillsbury style rolls yet, so I am not sure how they would turn out.

BEEF ROLLS WITH HAM AND VEGETABLES STUFFING

Beef Rolls with Ham and Vegetables Stuffing image

Categories     Beef     Mustard     Vegetable     Sauté     Ham     Chill     Bon Appétit

Yield Serves 4

Number Of Ingredients 11

2 cups chopped onion
2 bacon slices, chopped
1/4 cup finely chopped carrot
1/2 cup chopped smoked ham (such as Black Forest)
1/4 cup dry breadcrumbs
8 2-ounce slices tip steak beef round
1/4 cup German-style mustard
1 large dill pickle, cut lengthwise into 8 wedges
6 tablespoons (3/4 stick) butter
2 tablespoons Hungarian sweet paprika
2 cups canned beef broth

Steps:

  • Combine 1 cup onion, bacon and carrot in heavy medium skillet. Cook over medium heat until vegetables begin to brown, stirring occasionally, about 12 minutes. Mix in ham, then breadcrumbs. Cool filling completely.
  • Using meat mallet or rolling pin, pound each beef slice between sheets of waxed paper to 6x4-inch rectangle. Spread 1 1/2 teaspoons mustard over each beef slice. Spoon 3 tablespoons ham mixture onto center of each slice. Gently press filling out to cover meat and adhere, leaving 1/2-inch border on all sides. Place 1 pickle wedge parallel to 1 long side on each beef slice. Fold in short sides. Roll meat over pickle jelly roll style, enclosing filling completely. Secure with toothpicks. (Can be made 4 hours ahead. Cover and chill).
  • Melt butter in heavy large skillet over medium-high heat. Add 1 cup onion; sauté until golden, about 8 minutes. Mix in paprika. Add beef rolls; turn to coat with butter. Add broth; bring to boil. Reduce heat to medium, cover and simmer until beef is tender, turning rolls occasionally, about 40 minutes.
  • Using tongs, transfer beef to platter. Tent with foil. Increase heat to medium-high; boil until liquid is reduced to sauce consistency, about 15 minutes.
  • Remove toothpicks from beef. Top meat with sauce and serve.

Tips:

  • Choose the right ham. Look for a ham that is fully cooked and at least 10 pounds. A bone-in ham will give you more flavor, but it will be more difficult to carve. You can ask the butcher to remove the bone for you if you prefer.
  • Prepare the ham. Remove the ham from the packaging and rinse it with cold water. Pat the ham dry with paper towels. If you are using a bone-in ham, you will need to score the fat in a diamond pattern. This will help the ham to cook evenly.
  • Make the filling. The filling for your ham rolls can be anything you like, but some popular options include spinach and cheese, roasted red peppers and cheese, or ham and cheese. You can also add other ingredients to your filling, such as cooked vegetables, herbs, or spices.
  • Assemble the ham rolls. Lay the ham flat on a cutting board. Spread the filling evenly over the ham, leaving a 1-inch border around the edges. Roll the ham up tightly, starting from one of the long sides. Secure the roll with toothpicks or kitchen twine.
  • Cook the ham rolls. You can cook the ham rolls in the oven or in a slow cooker. If you are cooking them in the oven, preheat the oven to 350 degrees Fahrenheit. Place the ham rolls in a baking dish and bake for 1 hour and 30 minutes, or until the internal temperature reaches 140 degrees Fahrenheit. If you are cooking the ham rolls in a slow cooker, cook them on low for 6-8 hours, or until the internal temperature reaches 140 degrees Fahrenheit.
  • Serve the ham rolls. Once the ham rolls are cooked, let them cool for a few minutes before slicing and serving. You can serve the ham rolls with a variety of sides, such as mashed potatoes, roasted vegetables, or salad.

Conclusion:

Super stuffed ham rolls are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks. With a variety of fillings to choose from, you can customize the ham rolls to your own taste. So next time you are looking for a new and exciting way to serve ham, try making super stuffed ham rolls.
