YELLOW PEPPER SOUP WITH LIME

Yellow Pepper Soup With Lime image

Provided by Marian Burros

Categories     project, soups and stews, appetizer

Time 1h30m

Yield 9 cups or 6 to 8 servings

Number Of Ingredients 13

4 pounds yellow bell peppers, washed
2 tablespoons unsalted butter
1 pound onions, finely chopped
2 large cloves garlic, finely chopped
1 or 2 tiny hot red chilies, trimmed, seeded and chopped
1 pound sweet potatoes, peeled and cut in one-inch cubes
1 1/2 teaspoons very, very finely sliced makrut lime leaves
6 holy basil leaves, plus 6 to 8 sprigs for garnish
2 stalks lemongrass, trimmed, and bulb thinly sliced
3 pints vegetable stock
Salt to taste
6 to 8 tablespoons heavy cream for garnish
1 tomato, peeled, seeded and cut into very small dice for garnish

Steps:

  • Heat oven to 500 degrees. Place peppers on baking sheets, and roast until their skins turn dark brown; turn to brown all sides, about 40 minutes. Remove, place peppers in plastic bag and seal. Allow to steam at least 10 minutes; skins will come off easily. Stem, seed and remove seeds, but save the juices.
  • Melt butter in a pot large enough to hold the remaining ingredients. Cook onion, garlic and chilies over low heat so that they don't brown but soften. Add sweet potato, lime leaves, basil, lemongrass and stock. Bring to a boil, reduce heat and simmer 20 minutes.
  • Combine the peppers and their juices with the sweet potato mixture off the heat. Puree in a blender, in batches, until smooth. Season with salt. Refrigerate if desired.
  • To serve, reheat slowly and garnish with tomato and a spoonful of heavy cream dropped in the center of the soup and a sprig of basil.

6 yellow bell peppers (2 pounds), stemmed and seeded, cut into chunks
6 large sprigs tarragon, plus more leaves for garnish
2 3/4 cups homemade or low-sodium canned chicken stock, skimmed of fat
Salt and freshly ground pepper, to taste
1 large slice Italian bread, cut into 1/2-inch-by-3-inch pieces, toasted

MARCO CANORA'S YELLOW-PEPPER SOUP

Marco Canora's Yellow-Pepper Soup image

Chef Marco Canora prefers to use a food mill for this savory recipe from his "Salt to Taste" cookbook because it removes the skins from the peppers, which can sometimes be bitter, and doesn't aerate the soup.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 8

1/2 cup Blond Soffritto Base
3 1/2 pounds yellow peppers (about 7), cored, seeded, and chopped
2 pounds Yukon gold potatoes (about 3 medium), peeled and chopped
2 fresh or dried bay leaves
Coarse salt and freshly ground black pepper
1/2 small bunch thyme, tied with kitchen twine, plus leaves for serving
1/2 cup extra-virgin olive oil (optional), plus more for drizzling
Croutons, for serving

Steps:

  • Heat soffritto base in a large pot over medium-high heat. Add peppers and cook, stirring to coat. Continue cooking until peppers are softened, about 3 minutes. Add potatoes and stir to combine.
  • Add bay leaves and enough water to cover the vegetable mixture by about 1 inch (about 9 cups); season with salt and pepper and bring to a boil. Reduce heat to a simmer and cook until pepper and potatoes are almost soft, about 30 minutes.
  • Crush the thyme with the flat side of a knife and add it to the pot. Continue to simmer until peppers and potatoes are completely soft, about 15 minutes more.
  • Remove bay leaves and thyme; discard. Working in batches, pass soup through a food mill fitted with a fine disk. Whisk in 1/2 cup olive oil, if desired; season with salt and pepper. If soup seems too thick, add a little water to thin out. Serve warm, drizzled with olive oil and garnished with croutons and thyme leaves.

CHILLED YELLOW PEPPER SOUP WITH CHIVES

Chilled Yellow Pepper Soup with Chives image

Categories     Soup/Stew     Blender     Food Processor     Garlic     Onion     Lunch     Bell Pepper     Chill     Chive     Sour Cream     Gourmet     Sugar Conscious     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes about 17 cups, serving 16 as a first course

Number Of Ingredients 8

5 medium onions, sliced (about 6 1/2 cups)
1/2 stick (1/4 cup) unsalted butter
6 large garlic cloves, minced and mashed to a paste with 1/4 teaspoon salt (about 2 1/2 tablespoons)
1/2 cup dry white wine
9 pounds yellow bell peppers, cut into 1-inch pieces (about 17 1/2 cups)
4 cups chicken broth or water
1 cup sour cream
Garnish: 1/2 cup chopped fresh chives

Steps:

  • In a 6-to-8 quart kettle cook onions in butter over moderate heat, stirring occasionally, 5 minutes. Stir in garlic paste and cook, stirring, 1 minute. Add wine and boil until liquid is reduced to about 1 tablespoon. Stir in bell peppers and broth and simmer, covered, until peppers are tender, 20 to 25 minutes.
  • In a blender or food processor purée mixture in batches (use caution when blending hot liquids) until smooth and transfer to a large bowl. Season purée with salt and pepper and cool completely. Chill soup, covered, until cold, at least 4 hours, and up to 2 days. Whisk in sour cream and season with salt and pepper.
  • Garnish soup with chives.

Tips:

  • Choose ripe, flavorful peppers: The quality of your peppers will greatly impact the flavor of your soup. Look for peppers that are deep yellow in color and feel heavy for their size. Avoid peppers that are bruised or have blemishes.
  • Roast the peppers before blending: Roasting the peppers brings out their natural sweetness and smoky flavor. You can roast the peppers in the oven or on a grill.
  • Use a high-quality broth: The broth is the base of your soup, so it's important to use a good one. Look for a broth that is flavorful and has a rich color.
  • Don't overcook the soup: Yellow pepper soup is best when it is slightly creamy and still has a bit of a bite to it. Simmer the soup for just until the vegetables are tender.
  • Garnish the soup with fresh herbs: Fresh herbs add a pop of color and flavor to the soup. Try garnishing the soup with chopped parsley, cilantro, or basil.

Conclusion:

Yellow pepper soup is a delicious and versatile soup that can be enjoyed for lunch, dinner, or even as a snack. It's a great way to use up leftover peppers, and it can be made ahead of time and reheated when you're ready to serve. With its sweet and smoky flavor, yellow pepper soup is sure to be a hit with everyone who tries it.
