NONNA'S BISCOTTI

Nonna's Biscotti image

A few years ago, I copied down my Italian grandmother's recipes. She had collected them all in a box, in preparation for moving to a retirement community. Unfortunately, during the move, she lost the box, and now I'm the sole recipient of her culinary heritage. She was a fine cook, and a wonderful baker. She died a few months ago.

MRS. P'S BISCOTTI

Mrs. P's Biscotti image

This was given to me by my very best friend; it's her mother's recipe, and a wonderful basic biscotti recipe. Very rarely do I make them the same way twice. You can add dried cherries, cranberries, walnuts, toasted almonds, chocolate, white chocolate or cinnamon chips, or nothing at all -- It's good enough to stand on its own. I also change the flavorings and use almond or vanilla extracts. These will keep for a couple of weeks (if you're lucky) in your cookie jar!

Tips:

  • Use high-quality ingredients: The flavors of your biscotti will be greatly enhanced if you use the finest components you can get your hands on. This entails utilizing unsalted butter of the finest quality, eggs that are fresh from the farm, and flour that is made entirely of whole wheat.
  • Rest the dough for at least 30 minutes: This will give the gluten time to relax, making it simpler to roll out the dough and resulting in biscotti that are more crisp and airy.
  • Slice the biscotti thinly: This will enable them to become uniformly toasted and crispy all the way through.
  • Bake the biscotti twice: An additional level of crispness and crunch can be achieved by doing this. Make sure to let the biscotti cool fully in between baking sessions.
