1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
3/4 teaspoon cayenne pepper
1 egg white
3 1/2 cups mixed nuts (I use deluxe mixed nuts with no peanuts)
1/2 cup dried cranberries

Steps:

  • Preheat oven to 300°F and prepare baking sheet. I like to line a jelly roll pan with parchment paper, but you can grease your pan if you like.
  • Combine brown sugar, cinnamon and cayenne, set aside.
  • In a bowl large enough to accommodate nuts, whisk the egg white; add nuts, cranberries, sprinkle with sugar mixture and toss to coat. Spread onto prepared baking sheet.
  • Bake for 18-20 minutes or until golden brown, stirring once. Cool completely.
  • Store in an airtight container up to a week.

1 cup pecans
1 cup walnuts
1/4 cup shelled raw pumpkin seeds (pepitas)
1/3 cup pure maple syrup
2 tablespoons olive oil
2 tablespoons rosemary leaves
2 teaspoons crushed red pepper flakes
1 teaspoon hot smoked Spanish paprika
1 teaspoon kosher salt

Steps:

  • Preheat oven to 350ºF. Toss 1 cup blanched almonds, 1 cup pecans, 1 cup walnuts, 1/4 cup raw pumpkin seeds, 1/3 cup pure maple syrup, 2 Tbsp. olive oil, 2 Tbsp. rosemary leaves, 2 tsp. crushed red pepper flakes, 1 tsp. hot smoked Spanish paprika, and 1 tsp. kosher salt in a medium bowl. Roast on a rimmed baking sheet, tossing occasionally, until nuts are toasted, 20-25 minutes. Spread out on parchment paper, breaking up clusters. Let cool.
  • Nuts can be candied 2 days ahead. Store airtight at room temperature.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.

2 cups mixed nuts
1 ½ tablespoons white sugar
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
1 teaspoon curry powder
1 pinch ground cloves
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place the nuts on a large baking pan and bake in the preheated oven 10 to 12 minutes, taking care they do not burn. Remove from heat and let cool approximately 5 minutes.
  • In a small bowl, mix the white sugar, brown sugar, salt, pepper, cumin, curry powder, cloves and cinnamon.
