These don't look like they are going to taste as amazing as they do, and I know it might be asking a lot to have the oven on for 2 hours on a hot summer day. But it's on low and the end result will be worth it. Lean over the plate when you bite into the tomatoes, as the juice may squirt. You can eat these as a snack or a side dish, or put them through a food mill for an incredibly sweet sauce.

1 pound small plum tomatoes, halved lengthwise
Coarse salt to taste
A tiny amount of sugar
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 300 degrees. Put the halved tomatoes in a bowl and toss with the olive oil. Oil a rack that will fit on top of a baking sheet. Place foil on the baking sheet and oil the foil, and place the rack on top. Place the tomatoes, cut side up, on the rack. Sprinkle with coarse salt and a tiny amount of sugar. Place in the oven and roast for 2 hours. Remove from the heat and allow to cool for about 30 minutes. The tomatoes will look a little dry on the surfaces and the skin will be tough. 2 dry pints (20 ounces/600 grams) grape or cherry tomatoes
Salt and freshly ground black pepper
1/4 cup (2 ounces/60 milliliters) olive oil
2 tablespoons balsamic vinegar
2 tablespoons dark brown sugar
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1 teaspoon Aleppo pepper or red pepper flakes

Steps:

  • 1. Line a rimmed baking sheet with foil, making sure to cover the inside of the rim. Adjust an oven rack to the middle position and preheat the oven to 425°F/220°C.

4 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1/4 cup olive oil

1/4 teaspoon kosher salt
1 cup ricotta, at room temperature
1/4 teaspoon kosher salt

Steps:

  • For the tomatoes: Preheat the oven to 400 degrees F.

15 ripe tomatoes - peeled, seeded, and chopped
4 Granny Smith apples - peeled, cored, and chopped
5 sweet onions, chopped
2 cups white sugar
5 fluid ounces white vinegar
1 tablespoon pickling spice, bundled in cheesecloth
6 1-pint canning jars with lids and rings

Steps:

  • Combine tomatoes, apples, onions, sugar, vinegar, and pickling spice bundle in a large pot; bring to a boil and cook together about 10 minutes, stirring occasionally.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato mixture into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
