Time 35m

Yield 1 quart

Number Of Ingredients 10

3 ears corn, husks and silks removed
Kosher salt
2/3 up white-wine vinegar, plus more if needed
1/4 cup light-brown sugar
2 teaspoons mustard seeds
2 teaspoons coriander seeds
1/2 cup diced sweet onion, such as Vidalia
2 celery stalks, diced (2/3 cup)
1 red bell pepper, ribs and seeds removed, diced (2/3 cup)
1 jalapeño or serrano pepper (ribs and seeds removed for less heat, if desired), minced

Steps:

  • Cook corn in a large pot of generously salted boiling water until crisp-tender, about 2 minutes. Drain; let cool completely. Strip kernels from cobs with a sharp knife.
  • Meanwhile, combine vinegar, 1/3 cup water, brown sugar, mustard and coriander seeds, and 1 teaspoon salt in a saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves. Stir in onion, celery, and bell pepper. Reduce heat to medium-low; simmer until vegetables are crisp-tender, about 5 minutes. Stir in corn kernels and jalapeño; simmer 1 minute more. Carefully transfer mixture to a 4-cup-capacity or two 2-cup-capacity jars. Top with more vinegar, if necessary. (Liquid should fully submerge corn mixture and reach about 1/2 inch from top.) Let cool completely, then cover and refrigerate until ready to use, up to 1 month or can with our helpful instructions.

HOT AND SWEET CORN RELISH

Hot and Sweet Corn Relish image

This is the corn relish recipe I use which I've put together from several different ones. We like our relish spicy, but you can always tone down the heat by cutting back on the Jalepenos and leaving out the red pepper flakes. Serve it chilled. It's always a hit and it looks so pretty on the shelf, too! Since it has a vinegar...

Categories     Other Side Dishes

Time 35m

Number Of Ingredients 11

9 c corn kernals, either fresh or thawed frozen (2 two lb bags if using frozen)
4 c onions, vidalia, chopped
2 c red and green bell peppers, chopped
1 c finely chopped jalapeno peppers (adjust for personal preference)
3 c apple cider vinegar (minimum 5% acidity)
1 1/2 c sugar
1 Tbsp kosher salt
2 tsp dry mustard
1 tsp celery seed
1 tsp tumeric
2 Tbsp red pepper flakes (optional)

Steps:

  • 1. Sterilize jars and keep warm. Immerse lids and rings in very hot water and leave them there until you're ready to use them.
  • 2. Combine corn, onions, bell peppers, hot peppers, vinegar, sugar, salt, mustard, celery seed, turmeric and red pepper flakes (if using) in a large, non-reactive pot. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 15 minutes stirring occasionally.
  • 3. Fill the hot jars with the relish leaving 1" head space, run a small spatula around the inside of the jars to remove air bubbles and wipe rims and jar threads with a damp paper towel. Please lids on jars and tighten rings to fingertip tightness.
  • 4. Lower jars on a rack in the canner using a jar lifter. Make sure the jars are covered with at least 3-4 inches of water. Return to a boil and boil gently for 15 minutes.
  • 5. Remove jars and place on a clean dish towel out of direct sunlight. Let rest for 24 hours. Test jars for seal and refrigerate any unsealed jars. Store sealed jars in a dark cupboard for up to one year.

Tips:

  • Select Fresh Corn: Choose fresh and tender corn for the best flavor and texture in your relish. Look for ears with tightly packed kernels and green husks.
  • Blanch the Corn: Blanching the corn briefly in boiling water helps preserve its color and crispness. It also removes the starch and makes it easier to cut off the kernels.
  • Use a Sharp Knife: Use a sharp knife to cut the corn kernels off the cob. This will ensure clean and even cuts, and prevent the kernels from getting crushed.
  • Add Vegetables: Feel free to add other vegetables to your relish, such as diced bell peppers, onions, or cucumbers. These additions will enhance the flavor and texture of the relish.
  • Experiment with Herbs: Add fresh herbs like basil, thyme, or dill to your relish for an extra burst of flavor. These herbs will complement the corn and other vegetables nicely.
  • Use a Good Quality Vinegar: The type of vinegar you use can greatly impact the flavor of your relish. Choose a vinegar that has a mild and balanced flavor, such as apple cider vinegar or white vinegar.
  • Adjust the Sweetness: The amount of sugar you add to your relish is a matter of personal preference. Taste the relish as you make it and adjust the sweetness level to your liking.
  • Store Properly: Store your corn relish in a clean and airtight container in the refrigerator for up to two weeks. You can also freeze the relish for up to six months.

Conclusion:

Sweet corn relish is a versatile and delicious condiment that can be enjoyed in many ways. It is a perfect addition to hot dogs, hamburgers, sandwiches, and salads. It can also be used as a dipping sauce for chips, vegetables, or crackers. With its sweet, tangy, and crunchy texture, corn relish is sure to be a hit at your next gathering. So, experiment with different recipes and find the one that suits your taste the most. Enjoy the freshness and flavor of sweet corn relish all year round!
