SWEET MUSTARD-GLAZED SALMON FOR THE GRILL
Wild-caught salmon is a huge perk of living here in the Pacific Northwest, and this is one of my favorite ways of preparing it. The sweetness of the brown sugar mixed with two kinds of Dijon mustard compliment the salmon beautifully. I have used both light and/or dark brown sugars and only one kind of Dijon mustard with great success. I've also baked this in the oven for 20 minutes at 375*, but grilling adds a lot of flavor to the salmon.

Tips:
- Choose the right salmon: Opt for wild-caught salmon if possible, as it's generally considered to be more sustainable and flavorful. Look for fillets that are firm and have a vibrant color.
- Make sure the glaze is thick enough: The glaze should be thick enough to coat the salmon evenly and prevent it from drying out during grilling. If the glaze is too thin, add more honey or mustard until it reaches the desired consistency.
- Don't overcook the salmon: Salmon is a delicate fish, so it's important not to overcook it. Cook the salmon until it is just opaque in the center, about 4-5 minutes per side. Overcooked salmon will be dry and tough.
- Let the salmon rest before serving: Once the salmon is cooked, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the fish, resulting in a more tender and flavorful dish.
Conclusion:
Sweet mustard glazed salmon is a simple but delicious grilled dish that is perfect for a summer meal. The glaze adds a sweet and tangy flavor to the salmon, while the grill marks give the fish a slightly smoky flavor. This dish is sure to be a hit with your family and friends. Serve the salmon with grilled vegetables, roasted potatoes, or a simple salad. You can also add a dollop of tartar sauce or lemon wedges for extra flavor.
