4 cups peeled and grated sweet potatoes
1/2 seeded and diced jalapeño
3/4 cup all purpose flour
3/4 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 teaspoon chipotle chili powder
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1/4 cup whole milk
1 large lightly beaten egg
for frying olive oil
1 (8 oz) container sour cream
1/2 cup minced, for sauce, plus more chopped for garnish cilantro leaves
1 zested and juiced lime
1 pinch salt

Steps:

  • In a large bowl, combine the sweet potatoes, jalapeño, flour, baking powder, salt, chili powder, cumin and black pepper.
  • In a small bowl lightly beat the milk and egg until well mixed. Add to the sweet potato mixture, stirring, until all the ingredients are well combined.
  • Heat a large skillet over medium heat and add enough vegetable oil to cover bottom of skillet. Drop the sweet potato mixture, by rounded teaspoonfuls, into the hot oil. 1 pound sweet potatoes, finely chopped in food processor
1 small onion, finely chopped in food processor

¼ teaspoon kosher salt
1 pinch black pepper, or to taste
4 tablespoons olive oil
2 wedge (blank)s Lime wedges
1 tablespoon Cilantro for garnish

  • In a small bowl mix together Dannon® All Natural Plain Yogurt, lime juice and cilantro. Set aside until pancakes have been cooked.

2 large sweet potatoes, about 500g total weight
2 garlic cloves, crushed
1 small green chili pepper, chopped
2 sprigs cilantro, chopped
1 tablespoon soy sauce or 1 tablespoon Braggs liquid aminos
all-purpose flour, for shaping
vegetable oil, for frying
sesame seeds, for sprinkling
2 teaspoons vegetable oil
1 garlic clove, chopped finely
3/4 inch gingerroot, chopped finely
3 tomatoes, skinned and chopped
2 tablespoons soy sauce or 2 tablespoons Braggs liquid aminos
1 tablespoon lime juice
2 tablespoons fresh cilantro, chopped

Steps:

  • To make the Soy & Tomato Sauce, heat the oil in a wok and stir-fry the garlic and ginger for about 1 minute.
  • Add the tomatoes and stir-fry for another 2 minutes.
  • Remove from the heat and stir in the soy sauce, lime juice, and cilantro. Set aside and keep warm.
  • Peel the sweet potatoes and grate finely (you can do this quickly with a food processor). Place the garlic, chile, and cilantro in a mortar and crush with a pestle to a smooth paste. Stir in the soy cauce with the garlic, chili, and cilantro and mix in the sweet potatoes.

1/2 of a jalapeño pepper, stemmed, seeded, and minced
1 scallion, minced
1 Tbsp lime juice
1/2 tsp sugar
3-1/2 tsp salt, divided
3/4 tsp black pepper, divided

2 medium-size sweet potatoes, peeled and cut in large pieces
1/4 cup flour, plus additional for rolling
1 tsp cornstarch
1 tsp chili powder
2 cups panko breadcrumbs
2 egg whites, beaten
Oil, for frying
