Number Of Ingredients 8

Vegetable-oil cooking spray
3 large sweet potatoes (about 2 lb), peeled and cut into 1-inch cubes
2 medium carrots, peeled and finely chopped
1 small yellow onion, chopped
2 tbsp tahini
3/4 tsp salt
1/4 tsp curry powder
1/4 tsp ground cumin

Steps:

  • Heat oven to 400°F. Coat a shallow roasting pan with cooking spray; cook potatoes (covered with foil) for 15 minutes. Uncover and roast until tender, about 30 minutes. Tips:

  • Choose firm, evenly-sized sweet potatoes for a smooth and consistent spread.
  • Pierce the sweet potatoes with a fork before baking to allow steam to escape and prevent bursting.
  • Bake the sweet potatoes until they are tender when pierced with a fork, about 1 hour.
  • Let the sweet potatoes cool slightly before handling them to prevent burns.
  • Use a food processor or blender to puree the sweet potatoes until smooth and creamy.
  • Season the sweet potato spread with salt, pepper, and any other desired spices or herbs.
  • Store the sweet potato spread in an airtight container in the refrigerator for up to 5 days.
