1 pound chicken leg or thigh meat, cut in bite size chunks
4 ounces soy sauce
1/2 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon powdered ginger
2 tablespoons dried minced onion
1/2 cup Jim Beam Bourbon Whiskey
2 tablespoons white wine

Steps:

  • Mix soy sauce, brown sugar, garlic powder, powdered ginger, dried minced onion, whiskey and white wine together and pour over chicken pieces in a bowl. Cover and refrigerate (stirring often) for several hours (best overnight). Bake chicken at 350°F. for one hour in a single layer with the marinade, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat, and add 2 tablespoons white wine. Stir and add chicken. Cook for 1 minute and serve.

1 cup bourbon whiskey
½ cup brown sugar
1 cup ketchup
2 teaspoons Worcestershire sauce
¼ cup white vinegar
1 tablespoon lemon juice
½ teaspoon minced garlic
1 pinch dry mustard
salt and pepper to taste

Steps:

  • In a medium bowl, combine bourbon, brown sugar, ketchup, Worcestershire sauce, vinegar, lemon juice, garlic, and mustard. Season with salt and pepper to taste.
  • Use to baste meat, especially chicken or salmon, while cooking.

These are now my all time favorite. Sweet smoky with a Cajun flare. You are going to need tons of napkins or even better wet wipes. These are delicious. You may want to double or triple the recipe because these don't last long. You could also make these with chicken legs or thighs.

WINGS
10 chicken wings separated at joint tips discarded
2 Tbsp liquid smoke
1 Tbsp each cajun seasoning,garlic powder, and smoked paprika
1 tsp black pepper
SWEET CAJUN SAUCE
1 Tbsp olive oil
4 clove garlic minced
1 medium shallot minced or two small shallots
2 Tbsp lemon juice
1 Tbsp cajun seasoning
1 tsp salt
3/4 c chili sauce
3 Tbsp honey
2 Tbsp worcestershire sauce
1 stick cold butter cut into 8 pieces

Steps:

  • 1. Preheat oven 425 degrees.
  • 2. Place wings in a large bowl and drizzle the liquid smoke over them rubbing with fingers to mix well.
  • 3. Mix spiced together in a small bowl. Pour over wings and mix well.
  • 4. Line a baking sheet with foil and arrange the wings in a single layer. Bake for 30 minutes turning once. Check for doneness may take longer depending on size of wings.
  • 5. Meanwhile make the sauce.
  • 6. Place olive oil in saucepan and cook shallots and garlic until translucent. Add remaining ingredients except butter.
  • 7. Cook until warmed through. Add the butter 1 pat at a time stirring constantly until each is melted and incorporated into a sauce.
  • 8. Remove wings from oven. Toss in sauce and serve with favorite dipping sauce or just as is with plenty of napkins

6 chicken thighs bone in
3 Tbsp olive oil
4 clove garlic minced
1 large shallot chopped
1/2 c bourbon whiskey
1 c chili sauce
1/2 c honey
3 Tbsp lemon juice
1 tsp salt
2 Tbsp cajun seasoning
2 Tbsp worcestershire sauce
1 Tbsp liquid smoke
1 stick cold butter cut into 8 pieces

Steps:

  • 1. Place olive oil in large skillet. Season chicken with salt and place in olive oil and sear to get the skin brown and crispy. Remove chicken and transfer to a baking pan with a rack or set aside to cook on grill.
  • 2. In the same skillet you cooked the chicken deglaze with 1/4 cup Bourbon Whiskey scraping up bits. Add the shallots and garlic and cook until softened.
  • 3. Mix together the remaining ingredients except butter with the other 1/4 cup Bourbon. Add to pan and cook until thickened a bit.
  • 4. Slowly add the butter one pat at a time whisking constantly and let each pat melt before adding another. Keep whisking to incorporate all the butter.
  • 5. Brush the chicken with the sauce and place in preheated 400 degree oven. Continue to baste with sauce turning the chicken until done about 20 minutes.
  • 6. Tip: This recipe is best when the chicken is cooked on a rack or grill because of the richness of the sauce. It tends to be too oily if the chicken sets in its own juices while it bakes.
