Provided by Andrea Albin

Categories     Bake     Thanksgiving     Vegetarian     Quick & Easy     Cocktail     Pecan     Walnut     Healthy     Cinnamon     Cumin     Paprika     Gourmet

Yield Makes 4 cups

Number Of Ingredients 8

3 tablespoons sugar
1 teaspoon paprika
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
Pinch of ground cloves
1 large egg white
2 cups walnut halves (1/2 pound)
2 cups pecan halves (1/2 pound)

Steps:

  • Preheat oven to 350°F with rack in middle. Lightly oil a 4-sided sheet pan.
  • Whisk together sugar, spices, and 3/4 teaspoon salt in a small bowl. Whisk egg white in a medium bowl until frothy, then stir in nuts. Add spice mixture and toss to coat.
  • Spread nut mixture in 1 layer in sheet pan. Bake, stirring once or twice, until dry and well toasted, about 20 minutes. Loosen nuts from pan, then cool completely.
  • What to drink:
  • Schloss Saarstein 1st Growth Riesling Kabinett '08

Tips:

  • Choose the Right Nuts: Select nuts that are fresh, crunchy, and have a neutral flavor, such as cashews, almonds, or walnuts.
  • Roast the Nuts: Roasting the nuts enhances their flavor and makes them more crispy. Spread the nuts in a single layer on a baking sheet and roast in a preheated oven at 350°F for 10-15 minutes, or until golden brown and fragrant.
  • Make the Curry Paste: The curry paste is the key to the flavor of these nuts. Use a combination of aromatic spices like cumin, coriander, turmeric, and chili powder, along with fresh ginger, garlic, and onion. Adjust the amount of chili powder to your desired level of spiciness.
  • Coat the Nuts: Toss the roasted nuts in the curry paste until they are evenly coated. Make sure the nuts are well coated, but not swimming in paste.
  • Bake or Fry the Nuts: You can either bake or fry the nuts depending on your preference. Baking results in a slightly healthier option, while frying gives a crispier texture. If baking, spread the nuts on a baking sheet and bake at 350°F for 15-20 minutes, or until golden brown. If frying, heat oil in a pan over medium heat and fry the nuts in batches until golden brown and crispy.
  • Add Sweetness and Heat: Once the nuts are cooked, toss them with a mixture of honey and cayenne pepper. This adds a perfect balance of sweetness and heat to the nuts.

Conclusion:

These Sweet and Spicy Curried Nuts are a delicious and versatile snack that can be enjoyed on their own or added to salads, trail mixes, or yogurt parfaits. With their irresistible combination of sweet, spicy, and nutty flavors, these nuts are sure to become a favorite in your household. So next time you're looking for a healthy and flavorful snack, give these curried nuts a try – you won't be disappointed!
