¼ cup dark brown sugar
2 tablespoons white sugar

1 ¼ teaspoons salt
3 cups high-gluten bread flour
1 ½ teaspoons active dry yeast

Steps:

  • Place water, milk, vanilla extract, brown sugar, white sugar, cardamom, coriander, vegetable oil, and salt into the pan of a bread machine in that order. Pour the flour onto the other ingredients, and sprinkle the flour with yeast. Set the bread machine to the Dough cycle; turn on the machine.

It is definitely a sweet cornbread. Just how I like it. Every time I make chili, this is the cornbread we have with it. NOTE: the amount of vanilla is correct-it is called Sweet Vanilla for a reason!!! We love it...hope you do too.

1 cup yellow cornmeal, I use stone-ground
1 cup flour
3/4 cup powdered sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
1 1/4 cups buttermilk, I make my own using 1 1/4 Tablespoon lemon juice and enough milk to make 1 1/4 cups (let stand 5 minutes)
1 tablespoon pure vanilla extract
6 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine the dry ingredients in a large bowl.
  • In a small bowl, mix the eggs, buttermilk, and vanilla with a wooden spoon.
  • Add liquid mixture to the dry ingredients and pour the melted butter over the top of the batter. Stir just until all ingredients are moistened yet thoroughly blended; do not to over mix.

3/4 cup warm water (110 degrees max)
2 teaspoons sugar
1 tablespoon active dry yeast
1/2 cup all-purpose flour
3/4 cup plain low-fat yogurt
1/2 cup butter, softened, cut into small pieces
2 large eggs, lightly beaten
1/2 cup sugar
1 teaspoon salt
2 teaspoons vanilla extract or 2 teaspoons grated citrus zest
4 1/2-5 1/2 cups all-purpose flour

  • For the sponge: In a small bowl stir together water and sugar until sugar is dissolved. Stir in yeast and flour. Cover with plastic wrap and set aside until bubbly and active, about 10 to 15 minutes.
