SWEET CORN CASSEROLE
This is always requested over and over again. I love it and I don't really like corn. My best friend made this once and convinced me to try it, now it's a tradition to make for all holidays.

HABANERO HONEY SWEET CORN CAKE
This habanero honey sweet corn cake is spicy, sweet, savory, dense, moist, and very addictive! I also had no idea what to call this, as it's not really a cake, but it's also not a pie, or a pudding, or a custard, so I ended up with "cake" since it's inspired by sweet Mexican corn cake. No matter what you call this, it's phenomenal! Garnish with fresh fruit and top with crème fraiche, sour cream, Mexican crema, or whipped cream and freshly grated lime zest.

SWEET CORN CASSEROLE
This is definately an EASY "comfort dish". I got this recipe from my MIL soon after my husband and I began dating. She got this recipe from one of her many fellow military wives, during their time as a military family (my FIL was in the Air Force). It is quite sweet but has no added sugar! My hubby loves this!!!

- For a sweeter casserole, add 1/4 cup of sugar or honey.
- To add a savory element to the casserole, try adding 1/4 cup of chopped onion or bell pepper.
- Cornbread crumbs or crushed crackers can be used instead of cornflakes for a different texture.
- If you don't have sour cream, you can use plain yogurt instead.
