4 tablespoons butter, divided
2 to 3 slices day-old bread, cut into 1-inch cubes
1 can (15 ounces) dark sweet or Bing pitted cherries
2-1/2 teaspoons cornstarch
1-1/2 teaspoon sugar
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
Whipped cream and fresh mint, optional

Steps:

  • In a medium skillet, melt 2 tablespoons butter. Add bread cubes; cook and stir until browned. Remove from the heat; set aside. Drain syrup from cherries into a medium saucepan. Add cornstarch, sugar, extracts and remaining butter; bring to a boil. Boil and stir for 2 minutes. Remove from the heat; cool slightly. Stir in cherries. Divided bread cubes among two serving dishes; top with the cherry mixture. Garnish with whipped cream and mint if desired.

  • preheat oven to 350 degrees F (175 C)
  • Grease a 9x9 baking dish and set it to the side
  • In a small bowl, combine graham cracker crumbs and melted margarine.
  • Mix graham crackers and margins well and press into the greased baking dish.
  • Bake graham cracker mixture for 5 minutes and then cool.
  • In a large bowl, combine cream cheese, vanilla, sugar, and almond extract. Mix well.
  • In a medium bowl, whip cream until stiff peaks form. Fold the whipped cream into a cream cheese mixture.
  • Spread cream cheese mixture over cooled crust. Spoon cherry pie filling over of mixture. Smooth with offset spatula or back of a spoon. Chill in the fridge until serving.

19 ounces white cake mix
4 egg whites
1/3 cup oil
1 1/3 cups water
1/4 teaspoon almond extract
red food coloring
1 (21 ounce) can cherry pie filling
1 teaspoon orange peel
3 cups whipped topping

Steps:

  • Mix cake mix with egg whites, oil, and water. 4 egg whites are 1/2 a cup you could use egg beaters egg whites
  • Add almond extract to batter.
  • Remove 1/3 of the batter to another bowl; stir in 10 to12 drops red food coloring.( i used cherry juice ).
  • Spoon pink and white batters alternately into two greased and floured 9x1-1/2 inch cake pans.
  • Cut though batter with a knife to marble.
  • Bake in 350 degree Fahrenheit oven for 25 to 30 minutes.
  • Remove from pans.
  • Stir together pie filling and grated orange peel.
  • In another bowl mix Cool Whip with 8 to 10 drops red food coloring.
  • Place one cake on a serving plate.
  • Make a border of whipping topping on edge 1 inch wide and 1/2 inch tall; fill with 1/2 the cherry pie filling mixture.
  • Top with second layer.
  • Make another border of whipped topping; fill with remaining cherry pie filling mixture on top.
  • Frost sides with remaining topping.
  • Chill 3 hours.
