SZECHUAN CHICKEN

Szechuan Chicken image

Why go out for Chinese food when it is this easy? Serve with rice or Asian noodles. To slice the chicken thin, freeze for 20 minutes or so first or if you are using chicken from the freezer, slice before it is completely thawed. It isn't as hot as you would expect from "Szechuan"--if you want it spicy hot--add more crushed red chilies.

Yield 4 serving(s)

Number Of Ingredients 12

1 lb skinless chicken breast half
2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons cornstarch
2 teaspoons grated peeled fresh ginger
1/4 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil

1 green pepper, cut into 1/2-inch pieces
1 red pepper, cut into 1/2-inch pieces
1/4 cup dry-roasted unsalted peanuts

Steps:

  • With knife held in slanting position, almost parallel to cutting surface, cut each chicken breast half crosswise into 1/2-inch thick slices.

  • In wok or large non-stick skillet, heat 1 tablespoon oil over medium-high heat until very hot.
  • Add green onions and red and green peppers and cook, stirring frequently, until vegetables are tender-crisp, 2 to 3 minutes.

SZECHUAN CHICKEN LIVERS

Szechuan Chicken Livers image

This is a very versatile recipe. Instead of serving the livers over rice or pasta make crepes and fill them with these tasty livers. Another idea make an omelet and fold in the livers as your flavor accent. Or have them as a side dish on a buffet table. I haven't made this recipe for years - it is one of my earlier postings and I found that there were a few things that needed clarification so I have made some corrections

PERI PERI CHICKEN LIVERS

Peri Peri Chicken Livers image

This is another recipe we experienced while vacationing in South Africa. They serve it everywhere but finding a good version of this stuff isn't always easy. In South Africa they use Peri Peri powder instead of cayenne pepper. For me this recipe is a bit of a bust if it's not spicy enough.

Time 25m

Yield 4

Number Of Ingredients 6

2 tablespoons olive oil
1 large onion, chopped
1 teaspoon cayenne pepper, or to taste
½ pound chicken livers, rinsed and trimmed
salt and ground black pepper to taste
1 tablespoon brandy

Steps:

  • Heat olive oil in a skillet over medium heat. Cook and stir onion in hot oil until soft, 5 to 7 minutes.
  • Increase heat to high. Season onion with cayenne pepper and cook for just 10 seconds before adding the chicken livers; season with salt and black pepper. Cook and stir chicken livers until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove the pan from heat and pour brandy over the livers. Scrape the browned bits of food off the bottom of the pan with a wooden spoon. Stir and serve immediately.

CURRIED CHICKEN LIVERS

Curried Chicken Livers image

I finally measured everything so I could post this recipe that I made up over 10 years ago. I used to serve them with diced fried potatoes cooked in the same spices. Might be weird but I like sour cream with them too. Leftovers are yummy and I've even eaten them in a sandwich!

Categories     Chicken Livers

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 lbs chicken livers, cut into bite 1-2-inch pieces (I use kitchen shears)
1/2 cup flour
2 tablespoons curry powder
1/2 teaspoon turmeric
2 teaspoons garlic powder
1/2 teaspoon black pepper
2 tablespoons canola oil
garlic salt, to taste

Steps:

  • In a small bowl, whisk together: flour, curry powder, tumeric, garlic powder and pepper.
  • Roll chicken livers one by one in flour mixture and place on a plate.
  • Heat oil in a large skillet over medium heat.
  • Place chicken livers in a single layer in skillet.
  • Sprinkle garlic salt over the chicken livers.
  • Let cook about 5 minutes and flip livers over. Sprinkle them with more garlic salt.
  • Let cook about 5 more minutes more and test for doneness. Some people like them pink in the middle. I like them well done and browned through. I usually flip them one more time and cook them until the coating is browned all over and no more blood seeps out (about 15 minutes total). Some of the coating will crumble off or stick to the pan. I just scoop it up and serve it all together. Yum!

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and avoid any scrambling.
  • Use fresh, high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. Look for fresh, organic produce and high-quality meats and seafood.
  • Don't be afraid to experiment: This recipe is a great starting point, but feel free to adjust it to your own taste. Try adding different vegetables, spices, or sauces.
  • Be careful not to overcook the chicken livers: They should be cooked through but still slightly pink in the center. Overcooked chicken livers will be tough and rubbery.
  • Serve immediately: Szechuan chicken livers are best served hot and fresh out of the wok.

Conclusion:

Szechuan chicken livers is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of spicy, sweet, and savory flavors is sure to please everyone at the table. So next time you're looking for a quick and easy dinner idea, give this recipe a try. You won't be disappointed!
