1/2 pound Tabouli (tabbouleh salad (store bought - Deli))
1 English Cucumber - peeled and diced
3.0 oz container Crumbled Feta Cheese
Kalamata Olives (optional)
Greek Yogurt Dip (recipe included below)
1 Cup of Mayo
1 Cup Unflavored Greek Yogurt
2 tsp Dried Dill
1/4 th tsp Lawry's Seasoned Salt
1 tablespoon Minced Onion
Sea Salt
Black Pepper
2 tsp Lemon Juice
1 tablespoon dried Parsley

  • Before you get started, first prep your Greek Yogurt Layer. Combine all ingredients for that recipe (separately listed above) in a bowl and set in fridge till ready to use.

2 x 200g tubs hummus
400g can chickpeas , rinsed and drained
200g pack feta cheese , broken into chunks
handful pitted black olives
1 crisp Romaine heart
flatbreads , to serve
85g bulgur wheat
80g bunch mint , leaves finely chopped
80g bunch flat-leaf parsley , leaves finely chopped
2 large ripe tomatoes , deseeded and chopped
1 red onion , finely chopped
zest and juice 1 lemon
4 tbsp olive oil , plus extra for drizzling

Steps:

  • First, make the tabbouleh. Tip the bulgur into a saucepan, cover with water, season with salt, then bring to the boil and simmer for 15 mins until tender. Drain in a sieve, rinse under cold running water, then leave to drain over the pan. Mix the mint and parsley with the tomatoes, onion and drained bulghar. Whisk the lemon zest and juice and oil together with seasoning, then toss with the bulgur.
  • Spoon the hummus into the bottom of a portable picnic bowl or large Tupperware (or use a large plastic mixing bowl, as you can cover it tightly with cling film later). Scatter with the chickpeas, then sprinkle with seasoning and drizzle with a little oil. Spoon the tabbouleh on top. Now top with the feta and olives, then tear over the lettuce leaves.
  • Cover the bowl tightly with its lid or some cling film. Put a little more olive oil in a sealed container to take with you, then chill the salad for up to 24 hrs.

100g bulgur wheat
6 tbsp olive oil
100g couscous
200g mixed shelled nut , roughly chopped (any mixture of almonds, hazelnuts, walnuts, pecans and pistachios)
200g mixed dried fruit , large fruit chopped (any mixture of raisins, sultanas, apricots, dates and cranberries)
zest and juice 2 lemons
small pack mint , leaves roughly chopped
small pack flat-leaf parsley , leaves roughly chopped
2 garlic cloves , crushed
100g feta cheese , crumbled
grilled lamb or pork chops , to serve (optional)

Steps:

  • Boil the kettle. Put the bulgur wheat in a sieve and rinse with cold water until the water runs clear. Drain well and transfer to a mixing bowl. Pour over 200ml boiling water and 1 tbsp olive oil, cover with a plate and leave to soak for 30 mins. Meanwhile, put the couscous into a second mixing bowl with 1 tbsp olive oil, just cover with boiling water, then cover with a plate and leave to stand for 5-10 mins.
