This quick dinner was inspired by many other posts while looking for easy, gluten-free meal idea for a large crowd. It got such rave reviews i had to post for future meal. I failed to take a picture though.

1 pound ground beef
1 (15.25 ounce) can corn
1 (8 ounce) jar salsa
1 ounce processed cheese (such as Velveeta®)
1 ounce cream cheese
1 package taco seasoning mix
1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 (4 ounce) can sliced black olives
1 (4 ounce) can diced jalapeno peppers
4 ounces shredded Cheddar cheese
1 (8 ounce) container sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add corn, salsa, processed cheese, cream cheese, and taco seasoning to ground beef and stir until combined.
  • Spread beef mixture over bottom of 9x13-inch baking dish. Arrange potato nuggets over beef mixture, sprinkle black olives, jalapenos, and Cheddar cheese on top.
  • Bake in preheated oven until potato nuggets are crisp and cheese is bubbly, about 25 minutes. Garnish with sour cream.

4 medium russet or Idaho baking potatoes (about 1 1/3 lb)
1 package (1 oz) Old El Paso™ taco seasoning mix
3 tablespoons cornmeal
1/4 cup olive or vegetable oil
Salsa, if desired

Steps:

  • Heat oven to 450°F. Pierce potatoes with fork; place on microwavable paper towel or roasting rack in microwave. Microwave on High 6 to 8 minutes, turning once halfway through cooking, until almost tender.
  • Meanwhile, in large resealable food-storage plastic bag, mix taco seasoning mix and cornmeal.
  • Cut cooked potatoes lengthwise into quarters; place in large shallow dish. Drizzle with oil; toss to coat. With large slotted spoon, place potatoes in plastic bag of seasoning mixture; shake to coat. Arrange potatoes on ungreased cookie sheet.
  • Bake about 8 minutes or until golden brown and tender. Serve with salsa.

Me and my favorite girl (my daughter) were going to make a different recipe, but came up with this one instead. Kid friendly. You can also make it as a vegetarian meal.

3 lb ground beef (if you're a vegetarian, you can substitute black beans for the ground beef)
2 pkg taco seasoning mix
1 pkg tater tots
8 oz mexican blend shredded cheese
salsa, sour cream, lettuce, tomatoes (optional)

Steps:

  • 1. Set your oven for 425'. Put the tater tots in a 9x13 casserole dish and put in the oven.
  • 2. Cook your ground beef according to directions Drain and rinse the ground beef ( rinsing the meat makes,it less greasy).
  • 3. Add your taco seasoning to your ground beef along with 1/3 cup of water. Let it simmer for about 10 minutes.
  • 4. Once tots are done, pour taco meat over the tots and place cheese over the meat. Place back in the oven for 10 minutes or until cheese has melted.

Tips:

  • For crispier taco taters, use russet potatoes and cut them into 1/2-inch thick wedges.
  • Toss the potato wedges with olive oil, salt, and pepper before baking to ensure they're evenly seasoned.
