PASTA WITH CHERRY TOMATOES AND ARUGULA

Pasta With Cherry Tomatoes and Arugula image

This simple, glorious dish, popular in the southern Italian region of Puglia, is an argument for keeping cherry tomato plants in your garden or on your fire escape. Uncooked tomato sauce is juicy and cool on a summer evening. The recipe asks only that you halve the tomatoes (quarter them if they are particularly large), then combine them with garlic, salt, balsamic vinegar, arugula, basil and olive oil. Toss that with cooked pasta, and shower with salty, firm shavings of ricotta salata. Arugula adds wonderful flavor (all the more if you can find peppery wild arugula) and a nutritional punch.

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 pint cherry tomatoes, halved if small, quartered if large
1 plump garlic clove, minced or put through a press (more to taste)
Salt to taste (I like to use a very good coarse sea salt or fleur de sel for this)
1 teaspoon balsamic vinegar (optional)
1 cup arugula leaves, coarsely chopped
1 tablespoon slivered or chopped fresh basil
2 tablespoons extra virgin olive oil
3/4 pound fusille, farfalle, or orecchiette
1/4 cup freshly grated ricotta salata or Parmesan (more to taste)

Steps:

  • Combine the cherry tomatoes, garlic, salt, balsamic vinegar, arugula, basil, and olive oil in a wide bowl. Let sit for 15 minutes. Taste and adjust seasonings.
  • Meanwhile, bring a large pot of water to a rolling boil. Add a generous amount of salt and the pasta. Cook al dente, until the pasta is firm to the bite. Drain, toss with the tomatoes, sprinkle on the cheese, and serve.

BLT PASTA

BLT Pasta image

When another summer tomato sandwich just won't do, try this BLT pasta instead. This clever twist on the classic sandwich substitutes spicy arugula for lettuce and in-season cherry tomatoes for heirlooms, which cook in bacon fat and produce a silky, smoky sauce. If baby arugula is out of reach, baby spinach, watercress or Swiss chard would work well in its place. Serve with a raw, shaved zucchini salad tossed with lemon juice, olive oil and mint.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 7

1 pound paccheri pasta or other tubelike shape, such as penne or rigatoni
8 ounces bacon, diced into 1/2-inch pieces
1 pound cherry tomatoes, halved
Kosher salt and black pepper
5 ounces baby arugula
1/2 cup grated Pecorino Romano, plus more for serving
Flaky salt, for serving (optional)

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add pasta and cook until it is just under al dente, 1 minute less than package directions. Reserve 1 cup of the pasta cooking water, and drain the pasta.
  • Meanwhile, make the sauce: Place the bacon in a large skillet and cook over medium-low heat until crisp, stirring occasionally to make sure it does not burn, about 8 minutes. Remove with a slotted spoon and set aside on a plate lined with paper towels. Turn heat to medium and add the tomatoes to the skillet, tossing them to coat in the bacon fat. Season with salt and pepper. As the moisture from the tomatoes releases, scrape any browned bits that have accumulated at the bottom of the pan (add a few tablespoons of the pasta water if you need to) and continue to cook until the tomatoes begin to fall apart, about 5 to 7 minutes more. Add half the cooked bacon back to the skillet and toss to combine.
  • Increase the heat to medium-high and add the pasta directly to the skillet tossing to coat with the sauce. Add the arugula and 1/4 cup of the pasta water and carefully toss (you'll have a very full pan) until the arugula wilts. Add the cheese and an additional 1/4 cup pasta water and toss together until the cheese emulsifies and the pasta is glossy with sauce. If needed, add another 1/4 cup pasta water to loosen the sauce.
  • Serve in bowls and top with remaining bacon. Pass the grated Pecorino Romano at the table and season with flaky salt, if desired.

BACON, TOMATO AND MASCARPONE TAGLIATELLE

Bacon, tomato and mascarpone tagliatelle image

Bacon, tomato and mascarpone tagliatelle

Yield Serves 4

Steps:

  • Cook the tagliatelle in boiling water for 10 minutes, then drain and return to the pan.
  • Meanwhile, heat the oil in a frying pan and fry the onion and bacon together for 5 minutes. Add the mushrooms and cook for a further 2-3 minutes.
  • Stir in the soup and the mascarpone and season. Stir into the pasta, scatter with basil and serve.

Tips:

  • Use high-quality ingredients. This means using fresh, flavorful tomatoes, crispy bacon, and peppery arugula. Good ingredients will make a big difference in the final dish.
  • Don't overcrowd the pan. When cooking the tomatoes, make sure to give them enough space so that they can blister and caramelize. If you overcrowd the pan, the tomatoes will steam instead of roast.
  • Cook the pasta al dente. This means cooking it until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and unpleasant to eat.
  • Add the arugula at the very end. Arugula wilts easily, so it's best to add it to the pasta just before serving. This will help to preserve its freshness and flavor.

Conclusion:

Tagliatelle with Bacon, Burst Cherry Tomatoes, and Arugula is a simple but delicious dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your pasta saucy or dry, with or without cheese, this dish is sure to please. So next time you're looking for a quick and easy meal, give this recipe a try.
