1 medium onion, chopped
2 large eggs, lightly beaten
1/3 cup minced fresh parsley

GRAVY:
1/2 cup all-purpose flour
2-3/4 cups 2% milk
2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
1 tablespoon Worcestershire sauce
1 teaspoon coarsely ground pepper
3/4 teaspoon salt
NOODLES:
1 package (16 ounces) egg noodles
1/4 cup butter, cubed
1/4 cup minced fresh parsley

Steps:

  • In a large bowl, combine the first 6 ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. meatballs (about 36). In a large skillet over medium heat, brown meatballs in batches. Using a slotted spoon, remove to paper towels to drain, reserving drippings in pan., For gravy, stir flour into drippings; cook over medium-high heat until light brown (do not burn). Gradually whisk in milk until smooth. Stir in the consomme, Worcestershire sauce, pepper and salt. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened., Reduce heat to medium-low; return meatballs to pan. Cook, uncovered, 15-20 minutes longer or until meatballs are cooked through, stirring occasionally., Meanwhile, cook noodles according to package directions. Drain; toss with butter. Serve with meatball mixture; sprinkle with parsley.

1 lb. Ground Beef (80/20)
1 lb. Ground Pork
1/2 c. Red Onion (minced)
2 Garlic Cloves (minced)
2 Eggs
1/4 c. Milk
1/4 c. Bread Crumbs
1 tsp. Salt
1 tsp. Black Pepper
1/2 tsp. All Spice
For Gravy:
3 oz. Mushrooms
1/2 Red Onion (small, chopped)
2 Garlic Cloves
1/3 c. Unsalted Butter
1/3 c. All-purpose Flour
1 c. Beef Broth
1 c. Stout
1 c. Heavy Cream
1 tbsp. Worcestershire Sauce
2 tsp. Dijon Mustard
1 tsp. Salt
1/2 tsp. Black Pepper
1/2 tsp. All Spice
Garnish:
Ligonberry Sauce
Flat Italian Parsley

Steps:

  • For Meatballs:
  • Preheat oven to 350F and preheat cast iron pan to medium.
  • Place all meatball ingredients into mixing bowl. Mix until evenly incorporated.
  • Roll 2 oz. of mixture into ball. (Should make about 20).
  • Place 1/2 tbsp. butter into pan. Place 6-8 ball in pan. Flip once golden brown.
  • Once golden brown on both sides, place on baking sheet.
  • Bake for 18-20 minutes or until meatballs are 165F.
  • Pull and place aside.
  • For Gravy:
  • Place Mushrooms into same cast iron pan as Meatballs were cooked in.
  • Once starting to brown, add Red Onion.
  • Once Red Onions are turning translucent, add Garlic.
  • Once Garlic is fragrant, dump mixture into bowl. Save for later.
  • In same cast iron, place Butter. Once melted slowly stir in AP Flour.
  • Once Roux is made, add Stout, Beef Broth, Heavy Cream, Worcestershire, and Dijon. Mix until evenly incorporated.
  • Add Mushroom/Onion/Garlic mixture back into pan. Continue to mix so mixture doesn't stick to pan.
  • After 30 minutes, strain Mushroom mixture out of gravy. Add Meatballs back to pan.
  • Add dollop of Ligonberry Sauce to meatball before serving. Top with Flat Italian Parsley.
  • MUNCH!

2 tbsp rapeseed oil
1 onion , finely chopped
1 small garlic clove , finely grated
375g lean pork mince
1 medium egg yolk
grating of nutmeg
50g fine fresh breadcrumbs
300ml hot low-salt beef stock
½ tbsp Dijon mustard
2 tbsp fat-free natural yogurt
400g spring greens , shredded
lingonberry or cranberry sauce , to serve

Steps:

  • Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool.
  • Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins.
  • Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.

  • To prepare sauce juice the oranges (about 1 cup).

I love this version of Swedish Meatballs. I have no idea how "authentic" it is, but I enjoy it. Instead of using half-and-half I usually use all milk but the half-and-half will make a creamier sauce. You can substitute ground turkey or chicken for half the ground beef, but I wouldn't substitute it for more than half the ground beef because you want the drippings for making the gravy. I normally serve this over mashed potatoes.

1/2 lb ground pork (I use Johnsonville breakfast sausages)
2 slices white bread (without the crust ground into breadcrumbs)
1 medium yellow onion
1 medium egg
1 teaspoon Worcestershire sauce
2 1/2 tablespoons butter
1/3 cup canola oil
1/2 lemon
1/3 teaspoon nutmeg
1/4 teaspoon allspice
1 cup beef stock
1 (10 ounce) can Campbell's Cream of Mushroom Soup (the one with roasted garlic)
1 lb button mushroom (fresh, sliced, thats about 2 packs)
1 1/4 cups heavy cream

  • First and before you get the meat out of the fridge, get everything ready (you don't want ground meat out of the fridge for longer than necessary).
  • Start with the onion. Chop it very finely, season it lightly with salt, and gently cook it on low heat in a non stick skillet with a Tbsp of oil and 1/2 a Tbsp of butter until just golden. (Don't let it burn, it will turn bitter !) Let it cool, and reserve.
  • Make the breadcrumbs, and soak them in 1/4 of a cup of cream. Start adding the cream slowly, you don't want it dripping wet, just soaked, and the quantity of cream to add might depend on how moist your bread already is. Reserve.
  • Beat and season the egg, reserve.
  • Once this is done, get the ground meats out of the fridge and combine them (beef and pork) with the soaked bread, the beaten egg, the cooked and cooled onion, the nutmeg, and the allspice. Incorporate everything well, and salt and pepper to taste. Then cover and put back in the fridge for about half an hour. Don't overmix or the meatballs will be tough.
  • After half an hour, take your meat mixture out of the fridge and start to shape your meatballs (I make mine bite size, they cook faster and its easier to eat), and fry them until golden brown in a cast iron casserole (cast iron because it keeps the heat very well) in the rest of the canola oil with 2 Tbsp of butter for the taste. Once golden brown on all sides, Put them on paper towels in a tray and reserve.
  • In the same cast iron casserole, throw out most of the fat, and then saute the mushrooms on medium heat in what's left. Squeeze in the juice of half a lemon, and a few dashes of Worcestershire sauce. Once the mushrooms are cooked, deglaze the skillet with 1 cup of beef stock and scrape all the brown bits from the bottom of the casserole. Be careful with the salt at this stage, because the beef broth is already salted. You can always adjust the salt later.
  • Turn the heat to low and then slowly add the can of Campbell's mushroom soup, and the heavy cream (1 cup).
  • Once the mushroom sauce is nice and bubbly, add the meatballs back in, and let reduce on low for 30 to 40 minutes, until the sauce has reduced a third to a half (depending on how thick you want the sauce to be), and the meatballs are cooked through and the flavors have all combined.
  • Adjust salt and pepper to taste.
  • Serve on top of fresh mash potatoes, or buttered noodles.
  • I have added pictures of several stages of the dish to help you out.
  • NOTE : leftovers freeze beautifully. It's also a great dish to prepare a day ahead of time, because its even better reheated the next day. Just make sure you don't reduce the sauce too much when you cook it if you know you are going to serve it the next day, the sauce will finish to reduce as you reheat it (on low).

1 lb lean ground beef
1 egg
2 tablespoons water
1/2 cup breadcrumbs
3 tablespoons minced onions
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice

Steps:

  • Preheat oven to 350*F. (175*C).
  • In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
  • Bake in preheated oven for 20 to 25 minutes, turning once.
  • In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.
  • My Update Note: I have been making these meatballs for 30 years or more. I however use cornflakes crumbs instead of bread crumbs. I also put 1/3 cup parsley; I use 1/4 cup ketchup instead of water and 1 teaspoons soy sauce. Just a thought from an old chef.
  • Sometime I used frozen meatballs. Most jellied cranberry sauce come in 16 oz cans so if you decide to use the whole can you'll need to double all the other ingredients. Typical chili sauce comes in 12oz. bottle so you'll need two bottles if you use the full can of cranberry. Hope this helps your shopping.
  • I have made these numerous times and am ashamed to admit I'm just now reviewing them. Wonderful addition to the regular grape jelly recipes out there with great meatballs -- Based on experience and personal preference with these cocktail meatballs I offer the following suggestions: 1.) Add one packet of Lipton onion soup mix to the meatball mixture if you do not have time to mince or grate the onion. 2.) Bake meatballs over a drip pan to reduce the fat before adding to the sauce. 3.) If using frozen meatballs ENSURE you DO NOT use Italian meatballs as this upsets the balance of the meatballs and sauce (yuck)! 3.) Make the sauce the day before to let the flavors marry - I can't stress what a difference this makes! This recipe gets better the next day. 4.) The Heinz sauce in the round bottle seems to be the best chili sauce for this mixture. Reviewers: I seriously dislike people that rate a recipe based on the changes they have made to the original. I want to state that I rated this recipe on the recipe Lara submitted. The changes I suggested were based on my family's personal preference.

1 onion, finely diced
½ cup crushed saltine crackers
1 ½ pounds ground beef
1 egg
¼ teaspoon ground nutmeg
1 pinch ground allspice
¼ teaspoon minced garlic
1 packet dry white sauce mix
4 tablespoons chopped fresh dill
1 teaspoon sage
2 tablespoons all-purpose flour
¼ cup whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium frying pan over medium heat. Add onion and cook, stirring often, until tender, about 5 minutes. Transfer to a large bowl.
  • Mix cracker crumbs, ground beef, egg, nutmeg, and allspice with the onion until blended. Shape into 1 1/2 inch (4 centimeter) meatballs, and place in a glass baking dish. Sprinkle with minced garlic, and cover with foil.
  • Bake in preheated oven for 15 minutes, or until cooked through.
  • Meanwhile, make white sauce, following the directions on the packet. Stir in dill, sage, flour, and whipping cream.
  • Turn off oven, and remove foil cover from meatballs. Pour sauce over meatballs, and leave in hot oven for 10 minutes.

1 1/4 cups gingersnaps, crushed
1/2 cup milk
1 egg, slightly beaten
1 lb lean ground beef
1/2 lb ground lean pork
1/4 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon allspice
1/4 cup butter
1/4 cup flour
1 1/2 cups beef broth
1 teaspoon garlic, crushed
1 teaspoon thyme
1 bay leaf
salt and pepper
parsley

Steps:

  • Crush gingersnaps, approximately 20, 2 inch cookies, to make 1 1/4 cups.
  • In large bowl, combine crushed gingersnaps with milk and egg.
  • Add ground beef, pork, onion, salt, pepper and allspice. Mix well to combine.
  • Refrigerate, covered for one hour.
  • With moistened hands, shape mixture into meatballs, 1 1/2 inches in diameter.
  • Preheat oven to 325.
  • In hot butter in large skillet saute meatballs, just enough at one time to cover bottom of skillet, until browned all over. (I have elimanated this step to bake in hot oven until browned).
  • Remove to a 2 quart greased (pam) oven proof casserole dish as they brown. Pour off drippings to measure 1/4 cup, adding more butter if necessary.
  • Add drippings back to skillet heat and add flour stirring to make a smooth mixture.
  • Gradually stir in beef broth and bring mixture to boil, stirring constantly.
  • Add garlic, thyme and bay leaf, salt and pepper to taste simmer for 5 minutes for flavors to mingle.
  • Pour over meatballs and bake covered one hour.
  • Garnish with parsley and serve with noodles.
