- 1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
- 2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
- 3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
- I highly recommend adding grilled scallops or shrimp to this dish. enjoy.

- Add 1 cup rice to a saucepan.
- Drain crushed pineapple in a 2 cup measuring cup.
- Fill remaining cup with water until you have 2 cups. Add to saucepan.
- Add crushed pineapple and butter. Heat on medium high until boiling.
- Once boiling, reduce heat to simmer and cover. Cook for 15-20 minutes or until rice is cooked.
- Remove from heat. Stir well. Add lime juice, zest and mix well. (optional sugar is added here as well)
- Serve topped with chopped cilantro.

- Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. - In a glass or plastic dish with a lid, combine the pineapple with its juice, soy sauce, onion powder, sugar, lemon juice, barbeque sauce, and curry powder. Taste, and adjust seasonings if desired. Place the chicken into the mixture, cover, and refrigerate for 1 to 2 hours.
