4 boneless pork chops
1 teaspoon salt
1/4 teaspoon black pepper
1 1/2 tablespoon olive oil
1 tablespoon all purpose flour
1 teaspoon chili powder (or less if prefer lower heat)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon sage
1/2 teaspoon marjoram
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken or vegetable broth
1/2 tablespoon apple cider vinegar
2 tablespoon honey
2 tablespoon unsalted butter

Steps:

  • Sprinkle the pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper covering all sides then set aside for 30-minutes;
  • While the pork chops are resting, in a small bowl, mix together the seasoning blend including flour, chili powder, garlic powder, onion powder, paprika, sage, marjoram, black pepper, and salt;
  • After 30-minutes, pat the pork chops off and then dredge in the seasoning blend until coated well on all sides;
  • In a large skillet, heat the olive oil until hot and then place the pork chops into the ban with at least 1" between each chop;
  • Cook the pork chops on medium-high heat for 2-3 minutes until golden brown, then turn;
  • Reduce the heat to low and cover the skillet with a lid then simmer for 5-6 minutes for thin chops and 8-10 minutes for thicker chops (cook to 145°F or until juices run clear)
  • Remove the pork chops from the skillet and set aside (cover to hold heat);
  • Now, add the chicken broth and vinegar to the skillet and use a wooden spoon to break up any fond (bits of food) on the bottom of the skillet;
  • Stir in the honey then simmer until reduced by half;
  • When reduced, add in the butter and stir until melted;
  • Remove the skillet from the heat, add the pork chops back into the sauce, and spoon the gravy over them;
  • Let the chops rest for another 1-2 minutes in the pan gravy before serving with sauce over the top and a sprinkle of fresh parsley.

1 (2 lb) bag frozen tater tots
2 (10 ounce) cans cream of mushroom soup
8 ounces sliced mushrooms

Steps:

  • Pour tater tots into a 9x13-inch casserole dish.
  • Top with one can of mushroom soup.
  • Place sliced mushrooms over that.
  • Sear pork chops, then place over mushrooms.
  • Top with remaining can of soup.
  • Cover with foil.

This is something I threw together with some leftover pork loin I needed to use. Turned out quite tasty and the family was quite pleased. Mushrooms would have great as well. Enjoy!

11/2 - 2 lb cubed - pork tenderloin
garlic powder, onion powder, cajun seasoning, salt, pepper to taste
1/4 tsp paprika
5 medium russet potatoes - par cooked in microwave, about 10 minutes. - not mushy
1 onion, chopped
1/2 red bell pepper, chopped
2 Tbsp jarred, minced garlic
1/2 c chicken broth - or just enough to finish cooking pork to cut down the oil
2- 3 Tbsp oil
2 c fresh spinach

Steps:

  • 1. Season pork cubes with seasonings listed or use what you like. Bake potatoes in microwave until almost cooked through. Cube once cool enough to handle.
  • 2. Add oil to a large skillet. Bring to medium heat and when hot, add the pork, garlic, peppers and onion. Toss occasionally and saute until pork is no longer pink.
  • 3. Add some chicken stock and then add the potatoes, adding stock as needed to keep potatoes from sticking. ( you can add more oil instead, but I added stock to keep fat content down. )
  • 4. Once, everything is cooked and browning, toss in the spinach cook just until wilted.
  • 5. Serve. My family loved this easy dish.

Tips:

  • For a more flavorful dish, use a combination of ground pork and ground sausage.
  • If you don't have a cast iron skillet, you can use a large nonstick skillet.
  • Don't overcrowd the skillet when browning the pork and tater tots. Cook them in batches if necessary.
