85g light brown soft sugar
70ml light soy sauce
1 large garlic clove, crushed
4cm piece ginger, peeled and finely grated
1 tbsp cornflour
1 tbsp rice wine vinegar
sesame seeds (optional)
2 spring onions, finely sliced (optional)

Steps:

  • Pour 350ml water into a small saucepan with the sugar, soy sauce, garlic and ginger. Slowly bring to a simmer, stirring occasionally until the sugar has dissolved. Cook for 5 mins more or until glossy and slightly thickened. Combine the cornflour with 1 tbsp water and quickly whisk through the sauce. Whisk through the rice wine vinegar. If it's still too thick, add a splash more water. Pour into a clean jar and leave to cool at room temperature.

This example was done with a well marbled, tender rib eye steaks, but this marinade can used equally well with any steak -- or chicken or fish for that matter. I like to use fresh ingredients whenever possible, as it really makes a difference in the flavors you get.
Marinade Ingredients
1/4 cup soy sauce
2 tablespoons water
1 tablespoon brown sugar
2 teaspoons honey
2 teaspoons Worcestershire sauce
1 teaspoon white vinegar
1 teaspoon olive oil
1 clove garlic, minced
1/4 teaspoon onion powder
1/4 teaspoon ginger, fresh finely chopped
Mix together all of these ingredients in a bowl and whisk well to be sure that the honey and brown sugar are incorporated.

Steps:

  • In this example, this marinade produces enough to marinate two steaks, so it would be sufficient for two of anything (chicken breasts, salmon steaks etc). Place your steaks in a Ziploc bag and pour in the marinade.
