½ cup sliced black olives
½ cup sliced green onion
½ cup sliced celery
⅔ cup salsa
½ cup sour cream
1 teaspoon ground cumin
½ head iceberg lettuce, shredded
12 medium taco shells

Steps:

  • In a large bowl, combine the tuna, olives, green onions and celery; toss together.

1 (16 ounce) bag spiral shaped pasta
1 (10 ounce) can cream of mushroom soup
1/4 cup sour cream
2 cups milk
1 (10 ounce) can Rotel tomatoes & chilies, Drained (spice level to taste)
1 (10 -12 ounce) can corn, Drained
1 1/2 cups colby-monterey jack cheese, Shredded (or any Mexican cheese mixture will do)
2 (6 ounce) cans tuna, Drained & Flaked
1/2 cup corn tortilla chips, crumbled (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Cook and drain the pasta according to package instructions.
  • In large bowl, combine cream of mushroom soup, sour cream and milk; stir in Rotel, corn, 1 Cup cheese, tuna and cooked pasta.

600g sweet potatoes , cut into even chunks
2 tbsp extra virgin olive oil
1 tsp chilli flakes
400g can black beans , drained and rinsed
198g can sweetcorn , drained and rinsed
2 avocados , chopped
250g tomatoes , cut into chunks
1 small red onion , thinly sliced
1 small pack coriander , roughly chopped
juice 1 lime

Steps:

  • Heat oven to 200C/180C fan/ gas 6. On a baking tray, toss the sweet potato in 1 tbsp of the oil with the chilli flakes, sea salt and pepper. Roast for 30 mins until tender.
  • Once the sweet potato is nearly ready, combine the remaining ingredients in a large bowl with the remaining 1 tbsp oil and season well. Mix everything well but take care to avoid squashing the avocado. Divide the salad evenly between plates, or serve sharing-style with the sweet potato chunks.
