COWBOY CAVIAR

Cowboy Caviar image

Depending on where you're from, this simple dip is known as cowboy caviar or Texas caviar, and it's a favorite at tailgates and potlucks all over the South. Its creator, Helen Corbitt, a dietitian from New York, had never heard of black-eyed peas when she moved to Texas in 1931. The exact details are fuzzy, but at some point in her 40 years working in restaurants there, she combined black-eyed peas with a simple vinaigrette, and it was a big hit. The recipe has evolved over the years, and you can find a number of variations online. Some contain corn and black beans (as this one does), and others avocado. Some call for bottled Italian salad dressing, others homemade. No matter how you tweak it, it's always good with a pile of tortilla chips.

Black-Eyed-Pea Recipe

  • In a large pot, add black-eyed peas, water, bay leaf, and salt. Bring to a boil, then simmer until the peas are soft but still hold a slight firmness.
  • Drain the peas and let them cool.
  • Prepare a vinaigrette by combining vinegar, oil, mustard, and seasonings.
  • In a large bowl, toss the peas, celery, onions, and red peppers with the vinaigrette.
  • Serve chilled, garnished with parsley, and enjoy.

Key Cooking tips:

  • Choosing the right black-eyed peas: Dried black-eyed peas are the most traditional choice for Texas Caviar, offering a satisfying texture and rustic appeal. If using canned peas, be sure to rinse them well to remove any unwanted brine.
  • Balancing the flavors: Texas Caviar is delightful when the flavors are harmonious and well-balanced. Taste the vinaigrette before combining it with the other ingredients, adjusting the vinegar, sugar, and spices to your liking.
  • Using fresh, crisp, and flavorful ingredients: The quality of the ingredients plays a significant role in the final result. Opt for crisp and flavorful peppers, onions, and cucumbers that are at their peak freshness.
  • Chilling before serving: Chilling Texas Caviar enhances its flavors and allows them to meld together. Preparing it in advance allows the flavors to deepen and develop, resulting in an even more delectable dish. It's at its peak when served well-chilled.
