¼ cup coconut oil
2 large cloves garlic, very thinly sliced
2 cups cooked garbanzo beans
¼ cup fresh lime juice
¼ cup peanut butter

1 (15 ounce) can chickpeas, rinsed and drained
3 tablespoons peanut butter
2 tablespoons sriracha hot sauce
1/4 teaspoon ground ginger
2 small garlic cloves, minced
1/2 tablespoon honey
salt and pepper, to taste
1 tablespoon olive oil
3 tablespoons ice water
1 handful peanuts, roughly chopped (salted or not)
2 green onions, chopped
1 handful cilantro leaf, chopped
lime zest and juice (optional)

Steps:

  • Add chickpeas, peanut butter, Sriracha, ginger, garlic, honey/maple syrup/agave, and salt and pepper to taste into a food processor. Process until broken up. Scrape the sides with a spatula as needed.
