Thai-Spiced Baby Back Ribs image

This hearty game-day hors d'oeuvre from Stanton Social and Beauty & Essex chef Chris Santos gets its simple, spicy flavor from Sambal Oelek paste, a multipurpose condiment popular throughout Indonesia, Malaysia, and southern India that is made from fiery red chiles, vinegar, and salt.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 17

4 cups good-quality prepared barbecue sauce
2 cups hoisin sauce
Napa Cabbage and Jicama Slaw
2 to 3 tablespoons Lemongrass Oil
2 (4-ounce) cans red Thai curry paste
1 1/4 cups hoisin sauce
1/2 cup Sambal Oelek paste
1/4 cup soy sauce
1/4 cup honey
3 tablespoons peeled and grated fresh ginger
1 teaspoon Chinese five-spice powder
2 (3-pound) racks baby back ribs
4 stalks lemongrass, light green part only, smashed
6 cups homemade or store-bough low-sodium chicken stock
4 cloves garlic, sliced
3 (1-inch) pieces fresh ginger, sliced
1 cup soy sauce

Steps:

  • Make the rub: In a large bowl, mix together curry paste, hoisin sauce, Sambal Oelek, soy sauce, honey, ginger, and five-spice powder until well combined. Rub mixture on ribs and let stand for 1 hour.
  • Preheat a grill pan over high heat. Transfer ribs to grill and cook, turning, until grill marks appear on both sides, about 5 minutes per side. Transfer ribs to a large roasting pan and set aside.
  • Braise the ribs: Preheat oven to 350 degrees. In a large bowl, mix together lemongrass, chicken stock, garlic, ginger, and soy sauce; add to roasting pan with ribs. Cover roasting pan with parchment paper-lined aluminum foil. Transfer to oven and cook until meat begins to fall off the bone, 2 to 3 hours.
  • Make the barbecue sauce: Meanwhile, in a medium saucepan, mix together barbecue and hoisin sauce. Place over medium-high heat and cook until heated through. Remove ribs from braising liquid; strain braising liquid through a fine-mesh sieve. Discard solids and reserve 1/2 cup liquid.
  • Increase oven temperature to 450 degrees. Brush ribs with barbecue sauce and transfer to a baking sheet. Place 1/2 cup braising liquid on baking sheet and carefully transfer to oven; roast until sticky and caramelized, about 8 minutes. Cut ribs into individual pieces and serve with slaw; drizzle plate with lemongrass oil.

THAI-STYLE SPARE RIBS

Thai-Style Spare Ribs image

These ribs are often served in Thailand to accompany ice-cold beer, said Andy Ricker, the chef and owner of the Pok Pok restaurants in New York and Portland, Ore. He warns against overcooking them: Thai diners prefer ribs on the chewy side rather than falling-off-the-bone tender. They may be cooked over indirect heat in a covered charcoal grill, but it is far easier to bake them in a slow oven, then reheat (on the grill, if you wish) at the last minute. The ribs are quite flavorful on their own, but serve them with a spicy dipping sauce if you prefer.

Categories     dinner, meat, main course

Time 4h

Yield 4 to 6 servings

Number Of Ingredients 16

2 racks of baby back ribs, 3 to 4 pounds, halved lengthwise to make 3-inch ribs (ask your butcher to do this)
2 teaspoons kosher salt
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon tamarind paste or hoisin sauce
1 teaspoon toasted sesame oil
2 garlic cloves, minced
2 tablespoons grated ginger
1/2 teaspoon crushed red pepper
1/2 teaspoon black pepper
1/4 teaspoon cinnamon
Pinch of grated nutmeg
Pinch of cayenne
2 tablespoons Shaoxing cooking wine, mirin or sherry
3 tablespoons chopped garlic chives or scallions, for garnish
3 tablespoons chopped cilantro leaves and tender stems, for garnish

Steps:

  • Lay the ribs flat in a roasting pan. (You will have 4 long pieces.) Season lightly with salt on both sides.
  • Make the marinade: In a small bowl, combine honey, soy sauce, tamarind paste, sesame oil, garlic, ginger, red pepper, black pepper, cinnamon, nutmeg and cayenne. Add the wine and 1/4 cup hot water and whisk well.
  • Pour marinade over ribs to completely coat. Marinate at room temperature for 2 hours, turning once or twice, or cover and refrigerate for several hours or overnight.
  • Position a rack in the middle of the oven and heat to 250 degrees. Transfer the roasting pan, uncovered, to the rack. Roast ribs for 1 1/2 hours, basting with pan juices and turning ribs over every 20 minutes or so. If pan juices seem to be drying out or burning, add a little water to the pan. (Alternatively, cook ribs over indirect heat in a covered charcoal grill, turning ribs every 20 minutes or so.)
  • Pour juices from the roasting pan into a small saucepan. Spoon off fat from surface of sauce, then simmer sauce for a few minutes until slightly thickened, then use the juices to paint the ribs.
  • Turn up oven heat to 400 degrees. Return ribs to oven for 10 to 15 minutes, until nicely glazed. (Alternatively, return ribs to the grill to glaze.)
  • Use a sharp knife to divide ribs, cutting between the bones. Pile ribs onto a platter, sprinkle with garlic chives and cilantro, and serve.

SPICED SHORT RIBS

Spiced Short Ribs image

World-renowned chef Geoffrey Zakarian shares a recipe for Spiced Short Ribs from his cookbook, "Town/Country."

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Number Of Ingredients 18

4 tablespoons extra-virgin olive oil
3 white onions, cut into eighths
4 medium carrots, cut into thick slices
2 large leeks, washed thoroughly and cut into thick slices
2 1/2 teaspoons coarse salt
4 heads garlic, halved crosswise
3 1/2 tablespoons coriander seeds
2 tablespoons black peppercorns
1 bunch thyme (about 12 sprigs)
8 sprigs fresh rosemary
2 fresh bay leaves
6 thick, center-cut short ribs (3/4 pound each), bone-in
3 teaspoons celery salt
3 tablespoons Aleppo pepper flakes, or other hot red pepper
4 allspice berries
4 1/2 teaspoons cumin seed
4 tablespoons unsalted butter
Geoffrey Zakarian's Mashed Potatoes, for serving

Steps:

  • Preheat oven to 375 degrees.
  • Place 2 tablespoons oil in a Dutch oven large enough to hold the ribs in a single layer, over medium heat. When oil is hot, add onions, carrots, leeks, and 1 teaspoon salt. Cook, stirring occasionally, until vegetables are soft, about 15 minutes. Add garlic, 2 tablespoons coriander seeds, peppercorns, thyme, rosemary, and bay leaves.
  • Using kitchen twine, tie meat on each rib securely to the bone. Season the short ribs with 1 teaspoon salt and add them to the Dutch oven. Add enough water to the pan to just cover the ribs and bring to a simmer. Transfer pan to the oven. Simmer ribs, turning them every 30 minutes until very tender, about 2 hours. Remove pan from oven and allow ribs to cool in their liquid. Strain to remove vegetables, cover, and refrigerate, with meat still in its liquid, overnight.
  • Grind together remaining 1 1/2 tablespoons coriander seeds with celery salt, Aleppo pepper flakes, allspice, and cumin in a spice grinder or mortar. Transfer spice mixture in a shallow dish; set aside.
  • Remove meat mixture from refrigerator; skim and discard any accumulated fat from the surface. Remove short ribs from liquid. Transfer liquid to a medium saucepan and bring to a boil over medium-high heat. Cook until liquid is reduced by half, about 10 minutes.
  • Cut meat from bones. Pat meat dry with a paper towel, then trim off any excess fat or cartilage. Slice meat across the grain into 3/8-inch-thick medallions. Dredge each slice in spice mixture. Place remaining 2 tablespoons oil in a large skillet over medium-high heat. Season meat with 1/2 teaspoon salt. When oil is hot, add meat to pan. Brown meat for 1 to 2 minutes and turn; add butter. Continue browning meat, basting regularly with butter. Transfer meat to a paper-towel-lined plate to drain, then arrange on warmed serving plates. Serve each with mashed potatoes and 1 to 2 tablespoons of the reduced braising liquid.

Tips:

  • Choose the right short ribs: Look for short ribs that are well-marbled with fat, as this will help keep them moist during cooking. Beef short ribs are best for this recipe, as they have a richer flavor than pork short ribs.
  • Brown the short ribs: Browning the short ribs before braising them adds flavor and color. Be sure to brown the ribs in a large pot or Dutch oven over medium-high heat, and don't overcrowd the pot. If the ribs are too crowded, they will not brown properly.
  • Use a flavorful braising liquid: The braising liquid is what will give the short ribs their flavor, so be sure to use a flavorful liquid such as beef broth, red wine, or a combination of both. You can also add aromatics such as onions, garlic, carrots, and celery to the braising liquid for added flavor.
  • Cook the short ribs until they are fall-off-the-bone tender: This will typically take 2-3 hours, but the cooking time will vary depending on the size and thickness of the short ribs. To check if the ribs are done, insert a fork into the meat; it should slide in easily.
  • Serve the short ribs with your favorite sides: Thai spiced short ribs can be served with a variety of sides, such as mashed potatoes, rice, or noodles. You can also serve them with a simple green salad or steamed vegetables.

Conclusion:

Thai spiced short ribs are a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The ribs are braised in a flavorful sauce made with coconut milk, lemongrass, ginger, and other Thai spices. The result is a tender and flavorful dish that is sure to please everyone at the table.
