Optional: toss in some Schnapps for a boozy treat!

Provided by Sarah Fennel

Time 13m

Number Of Ingredients 10

1/4 teaspoon mint extract
1/3 cup chocolate chips
1/4 cup heavy cream
1 1/2 cups vanilla ice cream
1 large handful mint leaves (about 1/2 cup)
3+ tablespoons whole milk
15 drops green food coloring
8 Thin Mint cookies
2 Thin Mint cookies
1 tablespoon granulated sugar

Steps:

  • Cook fudge my heating cream on medium heat until scaling (steaming but not yet boiling). Remove from heat and stir in chocolate chips and mint extract. Set aside to cool slightly.
  • Pulverize two thin mint cookies in a blender until powder. Add in sugar and pour onto a small plate. Fill a clean bowl with water, then dip the rim of your glass into the water. Shake off excess liquid, then dip the rim into the powdered cookie mixture. Set aside.
  • Combine all shake ingredients in a blender. Begin with 3 tablespoons of whole milk, and add more as needed, one tablespoon at a time. It's better to start with a thicker milkshake than to make a thin one and have it unsalvageable!
  • Drizzle fudge sauce onto the sides of the glass, then pour in shake. Top with a few sprigs of fresh mint and a thin mint cookie!
