I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it.

4 1/2 teaspoons tarragon vinegar
6 1/2 tablespoons vegetable oil
3/4 cup chopped onion
2 1/2 cups Miracle Whip
1 cup sugar
2 carrots
2 heads cabbage

Steps:

  • Mix oil, onions and sugar.
  • Add tarragon vinegar.
  • Fold in Miracle Whip.
  • Pour over grated carrots and cabbage.
  • Fold in well.
  • Refrigerate in an air-tight covered dish.
  • Best if made the night before serving.
  • The tarragon is the secret seasoning.
  • Compare with the real KFC coleslaw.
  • Enjoy.

BEEF VINDALOO ( THE REAL THING)

Hot, Hot, and aromatic. This recipe uses white wine vinegar and some sugar, and is unusual in that. This is a low fat version and therefore healthier than some recipes. You will need a grinder/blender or mortar and pestle to make this dish. Its a cracker. Ps. a glass of lager goes well with this.

2 lbs stewing beef, in 11/2-inch cubes
1 tablespoon cumin seed
5 dried red chilies
1 teaspoon peppercorn
1 teaspoon fenugreek seeds
6 green cardamom pods (seeds only)
1 teaspoon black mustard seeds
1/2 teaspoon salt
1 teaspoon demerara sugar
5 tablespoons white wine vinegar
2 tablespoons oil
1 medium onion, sliced
1 inch fresh ginger, chopped
2 garlic cloves, chopped
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/2 pint warm water

Steps:

  • Grind together the cumin seeds, chillies, pepper corns, mustard seeds, fenugreek seeds, and cardamom seeds.
  • Add the salt, vinegar and sugar, to make a paste.
  • In a large pan heat half of the oil and fry the onions till golden, remove from the pan and drain. Add the cooked onions to the spice mix and blend again to make a thick paste.
  • Heat the remaining oil and fry the meat till just brown.Remove the meat with a slotted spoon and put aside.
  • To the pan add the ginger and garlic cook 2 minutes.
  • Add the ground coriander and turmeric, fry for 2 minutes.
  • Add the onions and spice paste and cook over low heat for 5 minutes.
  • Add the water and meat cover the pot and cook till the meat is tender.

Steps:

  • Combine flour, butter, and chopped nuts. Press into the bottom of a 9 x 13 x 2 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes, or until golden brown.
  • Combine cream cheese, sugar, and 1 container of whipped topping until well mixed. Spread evenly over the cooled crust.
  • Mix pudding mixes and milk well until thick. Spread evenly over the cream cheese filling. Spread remaining container of whipped topping over the pudding layer. Sprinkle grated chocolate over the top.
  • Refrigerate for 6 to 8 hours before serving.

This is a traditional English pub style recipe. I can make this anywhere in the world and it will evoke memories of pub lunches! This is no way a diet item! Its a robust & hearty dish!

700 g ground lamb
half a can Guinness stout (to marinade ground lamb)
1 large onion, diced
1 carrot, diced (optional)
2 garlic cloves, chopped
1/2 teaspoon dried marjoram
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 cup chopped english parsley
75 ml Worcestershire sauce
2 teaspoons flour (for thickening)
2 tablespoons olive oil
salt & pepper
1 kg potato (peel, boil, mash & season)

Steps:

  • Use 1/2 a can of Guiness Stout to marinade ground lamb. Leave covered in fridge for at least 1 hr and if possible overnight.
  • In a hot pan, put in olive oil and add mince lamb to brown. Strain cooked mince with a big sieve, separating meat & juice.
  • Reheat same pan, add more olive oil and now saute & brown diced onions, garlic and carrot till fragrant and translucent.
  • Add the cooked mince into this pan and mix well.
  • Add dried marjoram, rosemary and thyme and mix well.
  • Pour left over juice from the mince into the pan and add all the Worcestershire sauce and half of the English parsley and stir well.
  • Cook on low heat for 20 mins and when it starts bubbling, add in flour to thicken the mixture.
  • Add salt & pepper to taste.
  • Cook potatoes in salted water till soft enough to mash.
  • Strain potatoes and mash with a big knob of salted butter, cream and milk (totally full fat!). Season with salt, pepper and a dash of nutmeg powder.
  • Pour cooked mince mixture in a big enough pyrex dish.
  • Layer the mash potato on top and seal the edges.
  • Bake or brown in oven for 20 to 30 mins at 180 degrees celsius.
  • Serve with a side of boiled cabbage & carrots with lots of butter and sprinkle leftover English parsley!

2 tablespoons olive oil
1 tablespoon minced garlic
1 jalapeno, minced
2 tablespoons reserved spice mixture, from above
1 (12-ounce) bottle hot pepper sauce (recommended: Crystal hot sauce)
4 tablespoons butter
1 tablespoon white vinegar
1 tablespoon lime juice

Steps:

  • In a medium bowl, combine all of the spices. Remove and reserve 2 tablespoons of the mixture. Rinse the wings and pat dry. Add the wings to bowl with the spice mixture and stir to coat well. Loosely cover and refrigerate for 1 to 2 hours.
  • Preheat the grill to medium-high heat with direct and indirect heat or preheat the oven to 375 degrees F.
  • For the grill: Cook the wings over direct heat until they are good and crispy, about 15 to 25 minutes. Turn them over and put them on indirect heat, turning frequently, as needed.
  • Oven method: Line a baking sheet with a nonstick wire rack. Arrange the wings on the rack and bake them for 45 to 55 minutes, turning halfway through.
  • While the wings are grilling, in a medium saucepan over medium-high heat, add the olive oil, garlic and jalapeno. Saute for 1 minute, stirring constantly. Add the reserved 2 tablespoons of the spice mixture and 12 ounces of hot sauce. Bring to a simmer, add the butter, vinegar and lime juice. Hold warm until ready to serve.
  • When ready to serve, add the wings to a large serving bowl, pour in the sauce and toss.

1 (14 ounce) bottle catsup (preferably Heinz)
1 (10 ounce) can tomato soup (preferably Campbells)

1 teaspoon ground turmeric
1 teaspoon ground paprika
1 teaspoon sugar
1/2 teaspoon ground cinnamon

1 teaspoon good whiskey (I use Black Jack Daniels)

Steps:

  • Heat oil in large dutch oven (large stew pot) on high heat.
  • Combine beef and pork and begin to brown in oil on all sides.
  • When meat is browned on all sides add onion; add enough water to cover the meat and onions mixture.
  • Tie pickling spices in a cheesecloth or, us a metal tea ball only half full.
  • Spices will expand while cooking.
  • Drop cheesecloth or teaball into meat mixture.
  • Simmer mixture for 45 minutes.
  • Add ingredients from cans, diced tomatoes, tomato soup, and catsup; stir mixture well.
  • Finally add all the spices as measured, the vinegar and the WHISKEY!
  • Turn fire or heat to a low setting and simmer for 1 hour with lid on the pot.
  • Check and stir frequently to prevent the bottom from scorching or burning.
  • THIS IS ALL GOING TO MAKE YOUR KITCHEN SMELL AWESOME AS IT SIMMERS-- After simmering for the 1 hour it is ready to serve in bowls with large spoons.
  • OH YEAH< TAKE OUT THE PICKLING SPICE CONTAINER AND DISCARD TO THE SINK-- Ladle out and ENJOY!
  • (AN OPTIONAL SERVING- Is to add 2 cups of egg noodles as you are simmering the soup till the noodles are tender. You may have to add a little more water for the noodles).

½ pound thin spaghetti, broken into 1 1/2-inch lengths
salt and ground black pepper to taste
2 cloves garlic, minced, divided
1 tablespoon dried basil, divided
¼ cup olive oil, divided
2 pints grape tomatoes, diced
½ red onion, diced
1 (6 ounce) can small pitted black olives, halved lengthwise
1 (12 ounce) package sliced fresh mushrooms
6 romaine lettuce leaves, torn into bite size pieces

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the broken spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Drain well in a colander set in the sink. Transfer to a salad bowl while still hot, and season to taste with salt, black pepper, half the minced garlic, half the basil, and 2 tablespoons of olive oil. Refrigerate to chill, about 30 minutes.
  • In another bowl, mix the remaining minced garlic, basil, 2 more tablespoons of olive oil, grape tomatoes, red onion, black olives, and sliced mushrooms. Lightly toss the chilled spaghetti mixture into the grape tomato mixture, and season with salt and black pepper if needed. For best flavor, allow the pasta mixture to chill overnight to blend the flavors.
  • Just before serving, toss with the torn romaine lettuce.

butter, for greasing the pan
3/4 lb shredded cheddar cheese
3/4 lb shredded monterey jack cheese
8 eggs, lightly beaten
3 -4 cups light cream or 3 -4 cups milk
1/4 teaspoon paprika (optional)
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard

Steps:

  • Butter all the slices of bread on one side and cube them (1 inch squares are fine, but the size is not important).
  • Butter a large shallow baking dish.
  • Put about half the bread cubes in the dish (evenly distributed in the pan).
  • Sprinkle the cubes with half of the cheeses.
  • Repeat both layers.
  • Combine remaining ingredients and pour over the bread and cheese mixture (may look very liquidy, but it's okay; the bread will soak up the moisture).
  • Refrigerate 8-24 hours before baking (I like this b/c you can make the recipe the night before and just throw it in the oven for breakfast the next day).
  • Bake at 350 for 1 hour and 15 min or until brown (check often: this can be a tricky recipe, and oven temperatures can vary a lot).
  • You could add a lot of different things like sausage, ham, bacon, diced bell peppers, and onions, so if you'd like to add anything just throw it in with the cream mixture.
  • Best served with bacon or ham and coffee.

Homemade Nutella -- Better Than the Real Thing! image

Many European kids have grown up eating Nutella, I'm no exception & my kids love the stuff too. These days though, Nutella is becoming increasingly more expensive & as a mother of 2 young children, I'm also worried about what they're eating. This homemade version of Nutella is very simple to make & has only 3 ingredients. This is a recipe by Stephanie Gallagher.

Number Of Ingredients 3

1 1/2 cups chopped hazelnuts
1/2 cup dark chocolate chips or 1/2 cup semi-sweet chocolate chips
1 -2 tablespoon canola oil (I use sunflower oil)

Steps:

  • Place the hazelnuts in a dry skillet and toast over medium heat 2 to 4 minutes or until just starting to brown.
  • Place the hazelnuts and the chocolate chips in the work bowl of a food processor fitted with a metal blade. Process for 3 to 5 minutes until the mixture starts to become smooth.
  • Drizzle in one tablespoon of oil while continuing to process. If necessary, add another tablespoon of oil until the mixture becomes smooth and spreadable.
  • Store in the fridge in a clean jar or lidded container for upto 2 weeks. You will probably need to mix the spread before each use as the oil can separate.

This weeks Happy Birthday drink, in the Denver Post, is for Chaka Khan. She has hits from "I'm Every Woman" to "Sweet Thing". She turned 58 on Wednesday.

2 oz vodka
2 oz curacao
4 oz a few frozen raspberries, thawed
4 oz lemonade
crushed ice

Steps:

  • 1. Muddle the vodka, raspberries and curacao together in a tall glass.
  • 2. Add crushed ice and top with lemonade. Enjoy! Note: that isn't my pic. I will add mine when I make the drink.
