SPICY THREE-BEAN PANTRY CHILI
This vegetarian chili gets its rich flavor from caramelizing tomato paste and warming herbs, rather than long hours of cooking. You can amp up the heat by using a spicy salsa or some of the adobo paste (though the chile itself is pretty hot). Add corn for some sweetness, or canned hominy for a chunkier and funkier chili.

Steps:
- Heat the oil in a medium pot over medium-high heat. Add the tomato paste and cook, smearing and stirring constantly with a heat-proof spatula or flat-edged wooden spoon, until dark and aromatic, about 90 seconds. Add the chipotle, chili powder and oregano, and cook, stirring, for 1 minute. Stir in the salsa and 1 1/4 cup water. Stir in the beans and hominy. Bring to a boil, reduce the heat to medium-low, cover and simmer for 25 minutes, stirring occasionally.
- Meanwhile, bring 1 1/2 cups water to a boil in a small saucepan with a lid. Stir in the rice, reduce the heat to medium low, cover and simmer until the water is absorbed, about 15 minutes. Remove from the heat and let stand, covered, 5 minutes.
- Remove the chili from the heat, stir in the cider vinegar and let stand 1 minute. Fluff the rice with a fork, divide it among 6 serving bowls and top with the chili. Serve with pickled jalapenos and tortilla chips, if desired.

QUICK & EASY CALIFORNIA 3-BEAN CHILI
This recipe actually came from a Sunday newspaper circular for McCormick spice coupons. After I tried this recipe I have never gone back to any other spice mix or package for chili with or without meat. I would even go so far to say that it would be good for taco meat (minus the sugar). For a heartier one bowl meal serve over rice.

Tips:
- Choose high-quality beans: Look for plump, unblemished beans that are free of debris. Avoid beans that are wrinkled or have holes.
- Soak the beans overnight: This will help to reduce cooking time and make the beans more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
- Use a variety of beans: This will give your chili a more complex flavor and texture. Some good combinations include black beans and kidney beans, or pinto beans and navy beans.
- Don't overcook the beans: Overcooked beans will become mushy and lose their flavor. Cook the beans until they are tender but still hold their shape.
- Use a good quality chili powder: The chili powder is one of the most important ingredients in chili, so make sure to use a good quality one. Look for a chili powder that is made with a variety of chili peppers and has a deep, rich flavor.
- Add other spices to taste: In addition to chili powder, you can also add other spices to your chili, such as cumin, oregano, garlic powder, and onion powder. Season the chili to taste.
- Use fresh vegetables: Fresh vegetables will give your chili a more vibrant flavor and texture. Some good vegetables to add to chili include onions, bell peppers, carrots, and celery.
- Cook the chili slowly: The longer you cook the chili, the better the flavors will develop. Simmer the chili for at least 1 hour, or longer if possible.
- Serve the chili with your favorite toppings: Some popular toppings for chili include sour cream, shredded cheese, diced avocado, and chopped cilantro.
Conclusion:
Three-bean chili is a delicious, hearty, and versatile dish that can be enjoyed by people of all ages.
