I admittedly haven't tried this yet, but it's fairly similar to one that I've tried here on 'zaar so I feel very confident that I'll love this one, too! So kudos goes to recipe#175635! That is also a spicy melon salad with even fewer ingredients, so if you're interested in trying something like this that's another great option. I'm really looking forward to trying this one from Cooking Light!

3 MELON SALAD WITH FRUIT DRESSING

3 Melon Salad With Fruit Dressing image

I love fruits, especially melons and this recipe is a keeper. I got the recipe originally from an old community cookbook that was published in the late 80s, that my mother sent me. Thanks mom. *Please note* the chilling time is not included in cooking time.

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 13

1/2 cantaloupe, peeled and cubed
1/2 orange flesh melon, peeled and cubed
2 cups honeydew melon, shaped into balls
1 tablespoon sherry wine
3 mint sprigs (to garnish)
1 egg, large
2 tablespoons sugar, white
4 tablespoons dry sherry
4 tablespoons orange juice, fresh squeezed
2 tablespoons lemon juice, fresh squeezed
2 teaspoons butter
1/8 teaspoon salt
4 tablespoons whipping cream

Steps:

  • Add all the prepared melons to a bowl.
  • Sprinkle sherry over the melons and chill in the fridge, covered until ready to use. The melons taste better the longer they are chilled.
  • Now we make the Fruit Dressing, it is a slightly sweet and sour dressing and it compliments most fruits.
  • In a medium pan, beat together the sugar and egg. Add all the remaining ingredients except for the whipped cream.
  • Cook, stirring constantly until it thickens slightly. Cool and chill.
  • When ready to serve, whip the cream and fold into the mixture.
  • Top your fruit salad with the dressing and garnish with the mint sprigs.

Tips:

  • Choose ripe melons: The riper the melons, the sweeter and more flavorful your salad will be. Look for melons that are heavy for their size, have a deep color, and give a little when you press on them.
  • Use a variety of melons: Using a variety of melons will give your salad a more complex flavor and texture. Try using a combination of cantaloupe, honeydew, and watermelon.
  • Cut the melons into bite-sized pieces: This will make it easier to eat the salad and will also help the flavors to meld together.
  • Add some sweetness: If your melons are not very sweet, you can add some honey, sugar, or agave syrup to taste.
  • Add some acidity: A little bit of acidity will help to balance out the sweetness of the melons. You can add lemon juice, lime juice, or vinegar.
  • Add some herbs: Herbs will add a fresh, fragrant flavor to your salad. Try using mint, basil, or cilantro.
  • Chill the salad before serving: This will help the flavors to meld together and will also make the salad more refreshing.

Conclusion:

Three Melon Salad is a refreshing, flavorful, and healthy salad that is perfect for summer. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a light and healthy lunch or side dish, give Three Melon Salad a try!
