1 can (12 ounces) reduced-fat evaporated milk
1/3 cup reduced-fat sour cream
1/4 cup fat-free milk
3 large egg whites

  • In a nonstick skillet, saute the red pepper and onions in oil until tender. Remove from the heat. Stir in the chilies, jalapenos and half of the corn. 1 1/2 cups chopped yellow onion (from 1 large onion)
1 cup chopped green bell pepper (from 1 large pepper)
1 tablespoon minced garlic (from 3 cloves)
1 chipotle in adobo, minced with liquid (to equal 1 tablespoon)
Coarse salt and freshly ground pepper
4 cups frozen corn kernels, preferably organic, thawed
1/4 cup fine cornmeal
2 cups shredded pepper jack cheese
1/2 cup heavy cream
6 large eggs
Salsa, cilantro sprigs and sour cream, for serving

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish and set aside.
  • In a medium skillet, melt 2 tablespoons butter over medium-high heat. Add onion and pepper and cook, stirring often, until golden brown and caramelized, about 8 minutes.
