ROSEMARY-THYME APPLE PIE

Rosemary-Thyme Apple Pie image

Rosemary and thyme in apple pie?! That's just crazy enough to work! This pie is exquisitely aromatic, and the herbs really allow the apples to shine. The crust is the result of years of experiments, and it is flaky, buttery, and delicious. This pie has become the most highly requested item for me to bring to parties, and is always devoured immediately with lots of 'oohs,' 'ahhs,' and 'mms.'

Time 5h20m

Yield 8

Number Of Ingredients 12

2 ½ cups all-purpose flour
1 tablespoon white sugar
1 teaspoon salt
1 cup unsalted butter, frozen
8 Granny Smith apples - peeled, cored and sliced
½ cup unsalted butter
3 tablespoons all-purpose flour
½ cup white sugar
½ cup packed light brown sugar
¼ cup water
1 ½ teaspoons chopped fresh rosemary
1 teaspoon dried thyme

Steps:

  • Whisk flour, sugar, and salt together in a large bowl. Place in the freezer for 30 minutes.
  • Fill a 1-cup liquid measuring cup with water. Drop in 3 ice cubes; set aside.
  • Remove butter and flour mixture from freezer. Grate butter into the flour mixture quickly. Toss using a spatula or an electric mixer to incorporate the grated butter. Drizzle 1/2 cup ice water into the bowl and mix, adding a little more water at a time until dough begins to form large clumps. Gather and lightly knead clumps of dough together into a mound using your hands.
  • Divide dough in 1/2 and wrap each portion separately in plastic wrap. Refrigerate for at least 1 hour.
  • When ready to bake, roll dough out on a lightly floured surface and place bottom crust into a 9-inch pie pan. Roll out second crust and slice dough into long, 3/4-inch wide strips using a rotary pizza cutter.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Fill bottom pie crust with apples. Cover with dough strips, weaving into a lattice crust; crimp edges to seal. Place pie in the refrigerator.
  • Melt butter in a saucepan over medium heat. Stir in flour to form a paste. Add white sugar, brown sugar, water, rosemary, and thyme. Bring to a boil. Reduce heat quickly and let simmer until rosemary and thyme are very aromatic and sauce has thickened, 5 to 7 minutes.
  • Take pie out of the refrigerator and gently and slowly pour caramelized liquid over the crust, distributing it as evenly as possible so that some liquid gets into all openings of the lattice.
  • Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Continue baking until apples are soft, 35 to 45 minutes. Remove pie from the oven and let cool on a wire rack before serving.

Time 1h45m

Yield One 9-inch single pie, 8 servings

Number Of Ingredients 11

3 Golden Delicious apples, peeled and cored (about 1 1/4 pounds)
4 Granny Smith apples, peeled and cored (about 1 1/2 pounds)
1/2 cup honey
6 thyme branches
1/4 cup unsalted butter (1/2 stick), cut into small pieces
2 tablespoons instant tapioca
1/3 cup light brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
Flour, for dusting
Dough for 2 9-inch pie crusts (see recipe)

Steps:

  • Preheat oven to 425 degrees. Slice Golden Delicious apples and 3 Granny Smith apples into sixths.
  • In a large skillet over medium-high heat, bring 1/4 cup honey to a boil. Let simmer about 2 minutes, until honey is caramelized. Add 3 thyme branches. Arrange half the apples in a single layer in skillet. Sprinkle 2 tablespoons butter over apples. Cook apples, turning, until well caramelized on all sides (but not cooked through), about 10 minutes. Scrape apples and honey mixture into a bowl. Add tapioca and toss to combine. Repeat cooking process with remaining honey, thyme, butter and sliced apples. Add second batch of apples to bowl; combine. Discard all thyme branches.
  • Thinly slice remaining Granny Smith apple and add it to bowl. Stir in sugar, ginger and salt.
  • On a lightly floured surface, roll out both crusts to 12-inch circles. Place one crust in 9-inch pie plate. Scrape apple filling into crust and top with remaining crust. Pinch edges to seal. With a knife, slice 4 vents in top of crust. Place pie on a foil-lined, rimmed baking sheet.
  • Bake for 15 minutes; reduce heat to 350 degrees and continue baking until crust is dark golden and apples are tender when pricked with a fork, about 45 minutes more. Let cool for 30 minutes before slicing.

Categories     Food & Cooking     Quick & Easy Recipes

Time 10m

3 McIntosh apples, or Golden Delicious apples (or a mix of both)
2 tablespoons butter
1 teaspoon fresh thyme, leaves
1 teaspoon grated lemon zest
Coarse salt and ground pepper

Steps:

  • Core apples. Cut each apple into 8 wedges; halve wedges crosswise.
  • Heat 2 tablespoons butter in a large skillet over medium heat. Add apples and 1 teaspoon each fresh thyme leaves and grated lemon zest; season with coarse salt and ground pepper. Cook, tossing occasionally, until apples are just tender when pierced with the tip of a paring knife, 3 to 5 minutes.

Nutrition Facts : Calories 95 g, Fat 6 g, Fiber 1 g

Tips:

  • Selecting the right apples is crucial. Choose firm and crisp varieties like Granny Smith, Honeycrisp, or Pink Lady. These apples hold their shape well during baking and provide a delightful balance of tartness and sweetness.
  • Slicing the apples evenly ensures uniform cooking. Use a sharp knife or a mandoline slicer to achieve thin, consistent slices. This will help them caramelize beautifully in the oven.
  • Coating the apple slices in a mixture of sugar, cinnamon, and nutmeg enhances their flavor. Adjust the amount of sugar based on your preference for sweetness. You can also add a pinch of ground cloves or cardamom for a more complex spice profile.
  • Using unsalted butter prevents the dish from becoming too salty. If you only have salted butter on hand, omit the additional salt in the recipe.
  • Baking the apple slices at a high temperature for a short duration helps them caramelize and develop a golden-brown crust while maintaining their tender interior.
  • Adding a splash of lemon juice or orange juice to the apple slices before baking brightens their flavor and prevents them from browning too quickly.
  • Garnishing the baked apple slices with chopped nuts, dried fruits, or a dollop of whipped cream adds an extra touch of elegance and flavor to the dessert.

Conclusion:

Thyme-baked apple slices are a delightful and versatile dessert that can be enjoyed on their own, served with vanilla ice cream, or incorporated into other desserts like pies, tarts, and crumbles. With their irresistible caramelized crust, tender interior, and aromatic spice blend, these apple slices are sure to impress your taste buds. Whether you're looking for a comforting fall treat or a simple yet elegant dessert to end a special meal, thyme-baked apple slices are a perfect choice. Experiment with different apple varieties, spices, and toppings to create your own unique and delicious variation of this classic dessert.
