1 yellow onion, halved and sliced
1 red bell pepper, chopped
2 tablespoons balsamic vinegar
salt and pepper to taste
2 (8 ounce) fillets tilapia fillets
2 teaspoons olive oil
1 cup crumbled blue cheese
4 cups mixed salad greens

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).

1 pound farfalle, bow ties
3 tablespoons extra-virgin olive oil, divided
5 slices center cut bacon, chopped
1 medium onion, chopped
2 to 3 grated garlic cloves
1 bay leaf
12 white mushrooms, thinly sliced
1 can San Marzano tomatoes
4 (6 to 8-ounce) tilapia fillets
Salt and freshly ground black pepper
1/2 cup all-purpose flour
1 (10-ounce) box frozen peas
1/4 cup mascarpone cheese
3 tablespoons butter
1/4 cup balsamic vinegar
1/2 cup basil leaves, shredded or torn

Steps:

  • Heat a pot of water to a boil, salt the water and cook pasta to al dente.
  • Heat a deep large skillet with 1 tablespoon extra-virgin olive oil over medium-high heat. Add bacon and crisp 3 to 4 minutes. Add onions, garlic, bay leaf and mushrooms, season with salt and pepper and cook until tender but not browned, 5 minutes. Add tomatoes, crush them up with a wooden spoon and simmer 15 minutes on low heat.

1 garlic clove, minced
2 cups sugar snap peas, strings removed

6 4- to 5-ounce tilapia fillets
1/2 cup (1 stick) plus 1 tablespoon chilled unsalted butter, cut into 1/2-inch cubes

  • For thyme mashed potatoes:

  • Heat 1 tablespoon oil in each of 2 large skillets over high heat. Sprinkle fish with salt and pepper. Sauté fish until golden, about 2 minutes per side.
  • Rewarm balsamic syrup over medium-low heat. Whisk in 1/2 cup butter 1 piece at a time. Add remaining 1 tablespoon butter to peas; stir over medium heat until warmed. Season with salt and pepper.

4 tablespoons flour
1 1/2 lbs tilapia fillets, about 1/2 inch thick
1 tablespoon oil
6 tablespoons butter, divided
1 lemon, juice of
1 lemon, cut into thin slices
minced fresh parsley

Steps:

  • Season flour to taste with salt and pepper. Dredge fillets in flour mixture, shaking off excess.
  • Heat oil with 2 Tablespoons butter in a large nonstick skillet over medium heat. Add fillets without overlapping, cook in batches if needed.
